a couple of NC guys here hit it with BBQ....the real BBQ not that texas crap with sauce all over it...
we have three regions of BBQ...
mountain BBQ (woodlands in Blowing Rock) tastes smoky and has an aftertaste.
Eastern NC BBQ (what's that place in Weldon?)....dry and tasty, but you gotta drink a coke to get it down..
AND OUR PIEDMONT NC HEAVEN BBQ (Bob's in Creedmore)....vinegar coated and as tasty as you can believe....absolutely perfect with sweet tea and some hush puppies....
NEVER EVER consider Barbeque something you cook on the deck at home on the grill...that's GRILLING not barbequing....never put BBQ on a biscuit....and NEVER EVER EVER get BBQ at a chain resturant. The resturant MUST have a linoleum floor, MUST have a gravel parking lot, and MUST have a least seven pictures of pigs on the walls.0 -
NY State: (Upstate-mountains) No particular identity. Lots of venison. Bear, sometimes. Otherwise, mainstream American cuisine. Buffalo wings started in a bar in Western NY.
NYC: Eastern European influence. Jewish. That corned-beef/rye is a ringer. Home-made horseradish. Delmonico, restaurant entrepreneur (1870's). Steak cut featured in his restaurant in NY named after Delmonico's.
Polite Psycho: that paella...gonna make some. Used to, years ago when I worked in a restaurant. Yum!! Joe0 -
