    Are you getting ready yet? Which season you going? I missed elk archery (no money to go up to the mountains this year), but 1st deer archery opens wednesday and I can do that out here around home, west of Peetz.

    Who won the fights Satyrday night? I missed it and there is nothing on the UFC website. Really curious about Diego Sanchez and Josh Koscheck. I figure that GSP won over matt Serra. I also figure that Mike Swick beat the Japanese guy. But What happened????

    Me too. What little Elk i've eaten was rather dry though, but i just love the Whitetail here in the Ozarks.

    Whitetailed, Take chunks of venison and marinate it in bbq sauce for a day and fry it up. YUMM[:p]. Also very healthy for you, but it all comes down to personal preference when it comes to taste.

    I'm working on the butchering last night and tonight. I let it hang as long as I possibly could. I haven't tried any yet. I turned the back straps and tender loins into steaks, one good roast out of each hind, but I'm going to grind the rest. That means about 100 lbs of burger(maybe a little less). I'm freezing the burger in 5 lb bags and the plan is to learn how to make sausage this winter.

    Elk, cooked correctly, tastes much more like beef than deer. But the fat content is almost zero and the grain is very fine so the texture is much different. The trick is to learn to like it on the medium-rare side so that it doesn't dry out.

    Some friends who have a dog that requires an "all natural" meat diet. They take all my scraps including the bones. Very little goes to waste.

    I have only eaten Muley's so I can not say anything on whites, but the best meat i have ever had is Elk back strapes.

    I think I have only eaten elk once and it was in burger form. Was definitely very good though. I will have to try some backstrap in the future.

    Moose is not as good as elk but it is better than turbo goat
