Rockey Mountain Oysters Update
We did 35 Bull calves. 55 calves all together. I'm guessing at least 8 pounds of testicles,maybe 10 pounds.
Called the guy at church doing the wild game meal. He thought it would make a good appetizer. He's got to check on a recipe, but he thought it was pound them flat with a hammer and fry then like sausage patties.

There's a lot of things I don't eat, but calf fries isn't one of them. They are good, especially true CALF fries not the junk the cook and sell in bars and restaurants.
The recipe may upset the more queasy among us, but it's basically soak in salt water, peel off tissue, split or pound flat, and deep fry in batter. Beer batter or buttermilk is best, as if you were making chicken fried steak.

He's got deer, raccoon, squirrel, and I don't know what else, but never had this for a wild game meal before. He was going have to call his grandmother to be sure how to prepare it. I guess it's one of those things only old timers know how to do in this "civilized" state. 0 -
They're good, no fat, no grisel, no bone. Kinda remind me of those steak fingers they used to serve in school lunches.
As far as cooking them. Just clean them, meaning, get rid of the long stringy snot looking stuff. Get down to where it looks like a grape with veins, then just cut in half length-wise, and filet out of the veiny skin. Nothing but meat. Dip in eggs, roll in cracker crumbs and fry in oil.[:p][:p][:p][:p][:p][:p][:p][:p]

When I was in Crete several years ago, my Greek drinking buddy would always order this particular meat dish. It wasn't great but it wasn't bad either. I had inquired what it was several times but he sort of blew it off.
Finally one day at a taverna with another drinking buddy ( I had a lot of drinking buddies) he sort of drew me a diagram. I had been eating sheep balls (oysters). They are really a hot item in Europe. Crete is also where I ate my first snails. Lots of OUZO was needed for that. Actually they ain't that bad but it still would take a little ouzo to get me started. Tom0 -

I have not done it myself, but I know a couple of good-ol' boys down here that do. They say they are about the same as calf-fries, only smaller.0 -

Yes I have saved from whitetail . I have friends save them for me, plus get some from hunters in my aera at Fort Knox every year. In my opinion they tast like lamb fries.0 -

yep, but it is still the testicles/sex organ of a mammal where testosterone and sperm are produced, sorry can't do it, and i highly doubt if jimmy dean waste nuts in the sausage0 -

Yeah, there was a disproportionate number of bull calves. The early calves were mostly bulls also. I think there was only one or two big good looking heifers. There was more heifers in the late (smaller) calves. In any case, the heifers still had to be ran through the chute for shots and delice.0 -
