Preferred Method of Cooking Sweet Corn -
Grilled, baked, steamed, boiled, nuked, etc. What say you? Personally, i have gravitated to a ridged cast iron griddle. Drizzle with EVOO, salt pepper. Any time I have something going in tbe oven, I add a couple ears. 350° for 1/2 hour is good. Been having about 2 ears per day for 2-3 weeks now. Good stuff.
Rub with a stick of butter, prior to serving. Mmmnnnn good. Love it.

No I got some at a Taco truck that comes to the Golf Course I golf at sometimes, but I have had it other places. I asked the old Mexican lady what she put on it and she kind of gave me a recipe/directions on how to cook it.Its called Elote in Mexico and here is a close recipe to how I do it:ELOTE
Ingredients
8 ears corn, shucked
2 tablespoons vegetable oil
Kosher salt and freshly ground black pepper, to taste
1 cup crumbled cotija cheese, divided
½ cup mayo
½ cup sour cream
½ cup cilantro leaves, minced, plus more for garnish
2 teaspoons lime zest
1 teaspoon ancho chile powder
Lime wedges, for serving
Directions
1. Light a grill. On a sheet pan, toss the corn with the oil, then season with salt and pepper.
2. In a small bowl, stir together ⅔ cup of the cotija cheese with the mayo, sour cream, cilantro, lime zest and chile powder to combine.
3. Place the corn on the hottest part of the grill and cook, turning as needed, until cooked through and charred, 8 to 10 minutes.
4. Remove the corn from the grill and immediately brush each cob liberally with the cheese mixture and transfer to a platter. Garnish each cob with a sprinkle of the remaining ⅓ cup of cheese and more cilantro, then serve with lime wedges.
It should look like this, Serve with beer and Tacos. If you have never made fish tacos give them a try.

That looks good, Sam06.
My favorite is shuck the corn, coat with melted butter with pepper, wrap in foil and grill on a low setting for around 15 minutes, turning a couple of times, making sure you do not over-cook it. Kernels have to pop off the cob.0 -
It is good Don. I use the Mexican style sour cream but regular works fine too. You are right on the money you don't want to over cook it but you do want some char, I like using a webber charcoal grill cause you can get them hot and it just is better than on a gas grill. 0 -

Do you let the cobs cure before you use them to wipe with or do you just put more butter on them and use them while they're still warm.

I like boiled corn too. One thing never add salt to the water it makes the corn tough, sugar is ok though.Ken give it a try I think you will like it. I usually use the sweet white and yellow corn but that is what I grow.I forgot you can take the corn off the cob and mix it into a salad or with black beans and some more cheese for a cold corn and bean salad. If you are on a diet forget Elotes though

Good friend say this, get the pot of water boiling, go to patch, pull and shuck required numbers of ears, run just as fast as you can to the to the house and dump corn into the pot. Issue, if you trip and fall the corn is no longer fresh, repeat first part of recipe..After 8 to 10 minutes in the scaled, remove and cool in cold water to stop the overcooking, apply liberal amount of cow salve, salt and garlic powder, yum, yum.

I hate ruining the natural flavor of anything. If it's a good corn product just a simple quick boiling and eat. No need for butter and definitely not salt. Alright maybe just a little butter

Another for looks good! I copied the recipe and saved it. Thanks! 0 -
Unshucked, microwave 3 minutes. Roll up in dishtowel, let set 4-5 minutes. Use a sharp knife, cut thru the shucks all the way around the base of the cob. Grab top of husk, pull hard- silk comes off with the shucks. Now ready for buttah, salt, whatever flavors floats yer boat. 0 -
Love it fresh off the stalk, rip the husk off, bite into and enjoy, all the way to boiled, baked, grilled, ...

I fill a large stock pot with cold water and a cup (or 2) of brown sugar. Drop the corn unshucked into the bucket and soak for a few hours then throw it on the Big Green Egg.

I cut the seemingly wrong end off and cut enough. Microwave for around 1.5 min or 2 and slide it out of husk, with no silk at all 0 -
The raccoons and I stole so much from Wundudnee's garden he doesn't grow corn any longer. Stoopid us. 0 -
When I was a kid we went to some friend's house for a 4th of July picnic. They had a big tub of cold water full of corn still in the husks. We pulled the corn out, wrapped it in aluminum foil, and threw them on a small bonfire. After about 5 minutes we fished them out of the fire and carefully stripped the shucks off down to the stem. They had a bowl of melted butter and a salt shaker standing by. We dipped the corn in the butter, sprinkled on some salt, and held the corn by the husk in one hand, and ate tater salad with the other hand. Good Corn.

Basically, we steamed the corn instead of boiling it.
JoeEdit: Sorry, I had another one of those pesky senior moments. We shucked the husk off the corn.

I prefer steaming vegetables over boiling as well Bubba. Filled up on steamed broccoli, butter and shredded sharp cheddar cheese (one ear of corn) steak fries and General Tso's chicken wings yesterday.
Got's to have butter and salt/pepper though. I've got two left over ears (baked) from yesterday, (will lightly nuke em' and slather in butter.) and about 6 more uncooked ears on the countertop.

When I got out of the Air Force back in 1972, I got my own place. I cooked some corn on the cob, boiled it like my mother use to do. It taste terrible...so I called her up and asked her what I got wrong. She told me to boil it for four minutes or so. I was boiling it for one hour.....taste like toilet paper tubes..

Have 3/4 head of cauliflower ready to steam just now. 1/4" water. Little salt, some cajun seasoning. Finish with butter and shredded sharp cheddar cheese. If the pot will hold them, will add the two left over baked ears towards the end. The moisture will do them good.
More General Tso's wings and some more baked steak fries.
Mmmnnn...............Mmmnn....................
