Chili, Baby -
Gonna make a big batch here in a few minutes. (Day Off.) Bought a big pack of Carne Picade at a markdown yesterday. ($7 ish down from about $14 ish) It's kinda like chipped/shaved steak. I usually use ground beef in my chili, so I am interested to see how this turns out.
Believe I am going to use a box of Carroll Shelby Chili mix. (Good stuff) Yes, with all the Hot goodness. Diced onion sautee'd with the beef. A big can of Red Kidney beans, some pinto beans, a large can (or two small cans) of diced maters. Salt/pepper, a can of Old El Paso green chili's. Some diced pickled Jalapenos.
A few other things. Various Spices. Etc.
Be eating Chili for days.
Crock Pot. On High for a few hours until vigorously boiling, then Low overnight, then Warm from there on out.

Two other ingredients not listed. Masa Flour, from the Carroll Shelby Chlli seasoning pack. (A thickening agent.) And about two tablespoons of Magic Red Chili Flakes. (from gunnut505's genorosity.) RIP Brother, I Miss You.

I have a very large assortment of very spicy goodness in various Mason Jars. (Quite a bit, compliments of gunnut505's genorosity.) I think of you quite often Brother. Miss You.

Hey, it IS all good. I'm happy with both real chili and meat with beans stew. By itself, over rice, hot dogs, or even basketti.
Those Chili Beans? They're meant for that meat and beans stew that some people call chili. Or by themselves, which is also good.
My wife makes hers with beans, but she's just as liable to make it with turkey instead of beef. I don't make big batches of mine because mine is too spicy for her.
BTW, here's a contest-winning recipe that gets raves. It's not mine.
Brother Bart's Chili
1.5lb Chuck roast
32oz beef stock or broth....Broth is saltier...
4Tbsp Chili Powder
1Tbsp Garlic Powder
1Tbsp Onion Powder
1Tbsp Oregano
1Tsp black pepper
1 packet of Sazon Goya,Con Azafran(You can find this in most supermarkets)
1Tsp Cumin
1 medium onion,diced
1 8 oz.can tomato sauce
1 can Rotel Tomatoes,(Diced tomatoes with green chiles).
Method....
In a heavy soup pot or dutch oven...
Cut the Chuck roast into quarter inch cubes(this is important).
Cook until grey,not brown...Drain the meat and discard the grease and liquid. Set meat aside...
Cook diced onions with corn oil until soft.
Add beef stock.
Add Sazon packet.
Add tomato sauce.
Add Rotel.
Cook until boiling.
Taste for salt....Add salt while simmering until it's right...
At this point the mix should be orange.....
All Tbsp & Tsp should be heaping...
Add meat.
Add all dry ingredients EXCEPT Cumin.....
You might need to add water if it's too thick...
Simmer for an hour,covered,stirring every 10 minutes and taste it for salt...
Add cumin and simmer for 15 minutes...
Turn off the heat and let it set for a little bit....
Serve with sharp cheddar cheese and a dollop of sour cream...
My note: leave out tomato paste and Rotel for a more authentic tomato-free chili

I made a pot of chili for my promotion party when I made 1LT back in '73. Nothing special, just hamburger and some canned chili I brought from Texas to KY. (NO SPAGETTI!!!)
Met my future wife that night. She joked that chili gave me "permanent heartburn".
Lost her last year to cancer/covid after 46 years.
May have to find some "Wolf Brand" chili and make a batch.

I much prefer Nalley's to Wolf when I eat canned chili. Nalley's offers several kinds, including Jalapeno, All Meat, and Thick. The first is my fave, the second is my second fave, and the Thick kind goes great on hot dogs. Or spaghetti, I assume. Note that my fave has beans. I think that Texas Red is the real deal, but I'll eat any kind.

Beans do go in Chili. We went to a Texas Chili cookoff, and most had beans in them. I have never had chili without beans. The one thing that the Texans love in their Chili is, HOT Peppers. The Hotter , the better. I think half my face melted at that cookoff. Some of those chilis should have had a skull and crossbones' label on them.!!!!!!!!!!!! Look at the that damn Yankee, rolling around on the ground, with a garden hose stuck down his throat. Real funny guys. The next morning was even better. I used up both my sisters fire extinguishers in the bathroom, and half a jar of soothing crème. I came out of that bathroom walking like I just rode a horse from NY to California, non stop!!!!!!!!!!!! Next time we go to Texas, I'm not going to any cookoff or any place where I can't see what they are putting into my food. I think I would have been better off eating gas station sushi or Jack in the Box

Wait. Wait just a goldarn minute. Beans in a TEXAS Chili cookoff? Heresy. Heresy and slander.
Musta been way up yonder in the panhandle, where some Okies sneaked in (not Oakies) to sabotage real chili.
As a side note, the classic Chili Cookoff Judge humor piece below is still ROTFLMAO hilarious. Of course, it's only about a New Mexico cookoff, not nearly as spicy as a Texan one. Bwahaahaaaa!

Glad we have an Open dialogue. I appreciate any/all recipes, for those inclined to offer them.
Just got off the phone to my Son. We were talking about my Chili, and all my Recipes and cooking in general. He commented how much he missed my cooking and inquired if all my Recipes were in my head or?
Clued him in to where he could find them "Notes," in my Tablet, a lot written down and where he could find them, and a lot (Yes) in my head. He encouraged me to write a bunch down for him.
Hec has a love of Spicy food and Cooking in general, from me. I'm Proud of that.

My biggest chili fail, I cooked 4 sliced hobanero peppers de-veined but kept the seeds, with my onions and peppers. Turned into cs gas had to air the house out fo the night. Wife doesn't care for heat at all and was pissed. Usually have to make two pots of chili.

The reason Texans hate beans in chili is because the beans they grow there are way too big to fit in the pot.

when I make chili I clean out the refrigerator, anything leftover and red goes in the crockpot, tomatoes, sloppy joe, meatloaf, half jar salsa, whatever isn't in the fridge, beans, spices I add to the pot, more meat, more tomatoe, ect. each batch tastes a little different and we never know till its done how good it is, don't matter it gets eaten anyway. with some peanut butter on toast to dip in the bowl as we eat, don't know what these recepies are you all talk about...........
