Tired of bad quality, at crazy inflated prices
on beef at grocery stores. So we went to our local butcher and ordered a side of cow. I think we'll be $$$ ahead and already know the quality is excellent.

I agree…. Our neighbor raises cattle and we have a quarter coming at the end of the month…. It is nice when you know where the meat comes from.
It is a good move Joe…. better meat you can have it cut up and packaged the way you want it….

Yep. Very, local,very fresh. He let's it hang 14 days before butchering. $4.99 lb. hanging weight.

Way home from the butcher, wife asked if I wanted to go by the farm and pick out the one we want, and tell them which side, left or right.

Store bought beef makes me sick. I raise my own. If you figure the cost of steaks, you will absolutely be money ahead a $4.99lb.

A pound of bacon done got smaller (12/14 ounces?), cost is at stupid prices (I think it was $8?). The whole country must have lost weight under biden.

There is nothing better than beef that has bin fattened up for butchering. I like fat in my beef, ( marbled) that is where the flavor comes from. As far which side is more tender right or left, I would imagine it depends on whether the cow is left or right hoofed. lol

There will come a day when I won't be able to keep up with all the chores and will have to go back to buying beef. Here's a picture of this years crop. They'll go to butcher in late October of '25.
Two heifers and a steer. My great niece (4 years old) named them Smoke, Charcoal, and Backstrap.
The ones going to butcher this coming October are Tic, Tac, and Toe.
