Big Chili
Here's the pot of chili I put together tonight. It's in the fridge until I get up tomorrow morning when I'll plug it in (crock pot)
1.5-2 lbs of meat (97% lean grd beef or deer)
12 oz can each of chili beans, black beans, navy beans.
12 oz can of tomato paste.
2-3 cups of water.
2 onions, diced.
5-6 cloves of fresh garlic, pressed.
2 fresh jalepenos, seeds removed, diced.
tsp vinegar
tsp worcestershire sauce
a little salt (I normally use 2 beef boullion cubes, but didn't have any)
grind up some fresh pepper
3 tbsp cumin
tsp ancho chili pepper
a couple tsp cayenne pepper
a couple tsp chili powder
tsp basil
tsp cinnamon
2 tbsp cocoa powder
tbsp allspice
some cajun seasoning I found in the cupboard
any other random stuff in the cupboard.
then I put in a squirt of everything in my fridge:
barbecue sauce
steak sauce
dijon mustard
sweet jalepeno mustard
taco sauce
frank's redhot
tabasco chipotle sauce
I might go back and throw some stewed tomatoes in there too.
It'll be in the crock pot all day tomorrow.
When it comes to chili, i figure more is better, and this chili is mo' betta.

...My chili recipe is long, but not that long. After taking 30 years to get it right, the recipe has gotten shorter.
..Steak sauce? Worchester sauce? Allspice? Vinegar? BBQ sauce? ...a crock pot??????? Cast Iron Dutch Oven ONLY.

Actually it was a lot easier to make the chili than it was to type the recipe. a lot of it was just throwing everything I had into the pot. 0
