15 degrees 0 -
It is hard to hold the knife at the proper angle on a sharpening stone.
I have about 7 stones, but I really like the ceramic sticks. They are about ten inches long, they protrude from a little block of wood in the form of a "V."
All you have to do is hold the knife vertically and off you go.0 -
15 degrees? sounds sharp, but my knives get used so i need a durable edge. woulden't a 15 degree edge make the edge too thin? 0 -
i almost bought those ceramic sticks instead, it looked easy enough, but i went with a flat stone instead. 0 -
Just make sure you hold the blade at a consistant angle while sharpening. The steeper the angle (flatter to the stone), the quicker it will dull with use, but it will sharpen quicker as well. It usually takes a while to work through the factory bevel and create your own angle. I slide the blade forward and then pull it back to me "X" number of times on one side and then switch over to the other side. My knives are RAZOR sharp after sharpening them. 0 -
plenty of practice. it's easy to screw up the edge of a knife.it took me several years to learn, some stones won't sharpen a knife when you find a good stone treat it like a baby and keep it clean 0 -
Lansky System. 0 -
wow, this is more complicated than i thought... well, i'm getting this first knife pretty sharp, and it was really really dull.
is there a quality difference in the stones?0 -
I've got a Lansky but don't use it. My G-pa taught me how to use a stone when I was 8. Put a little split or oil on the stone and move the blade in a circular motion with the edge forward. 0 -

So, send it to me. I guarantee it will be used.0 -
I used a stone from the time i was a little kid. Then our stone broke in two. Bought a Lansky, love it. Simple, and always the same edge. I wouldnt sharpen anything with less than a 20* angle. Personal opinion of course 0 -
Wife was "nice" enough to sharpen a razor I had laying around.
She found out later that I used leather on it, NOT a grinder. [:0]
She never has been "nice" enough to sharpen another blade for me.0 -
I paid $50 for a SPYDERCO ceramic sharpening system. It's the best sharpener I've ever owned. Only draw back is cleaning the 4 ceramic triangles with brillo pads. 0 -
What is a Lansky? 0 -

I think you are joking, but if not Lansky is a band of sharpening system.0 -
No, not kidding. I have 4 diamond stones, one Arkansas stone, a nice synthetic scissors sharpener that works real well, and ceramic sticks, and a couple other stones, but never heard of Lansky.
Anyway I googled it up. That is pretty cool, a little clamp that holds the knife and then you stick the guide rod into the hole to get the angle that you want.
I just cannot get a consistent angle on a stone, one side of the blade always gets sharpened at a different angle from the other.
I will consider getting a Lansky, but I have been using the ceramic sticks for several years now, I get great results with them.0 -

Oh, I use Razor's Edge stones. they work better than i can make them work. never liked all the gadgets that came with lansky but know alot of people use them.0 -
ljwrench: Got the Lansky. Thanks a million! It will be used.
