Anyone know of a good rescipe for deer sausage.

  I tried some of my sausage this weekend and it was very dry, ie not enough fat. but the tast was good.

  if you dont want to go to all the bother and mix all the spices, you can go online and type in OLD MANSION spices . i have used it for years and reaslly like it . they have several varieties to choose from.

  Buy some beef or pork fat. Mix in one part fat to three parts venison.
  I use Old Plantation pork sausage spice, you can get it online.

  Another good option for "cheater" sausage is to use the kits that Cabelas sells. Their summer sausage and snack sticks are great! I haven't tried any of the other sausages that they sell cuz the wife doesn't like sausage. Except for mine, of course. [}:)]
