Pepper sauce ----
For those of you who grow your own peppers and like your food a little spicy, have you ever made your own hot sauce???
I works very well on cooked greens (collard greens, turnip greens etc). Also very good in chili or home made BBQ sauce. It mixes well with the food and is better than just eating peppers with your food.

Last year's stuff.
The red sauce is Cayenne pepper sauce(damn good), the green is a Jalapeno/green cayenne sauce(very hot).
I plan on making some this year, if my Cayenne plants will take off and grow as well as they did last year.

...Make it seldom now, used to make a lot. There is a speciality shop that has probably a thousand (literally) kinds of pepper sauces over in Dallas.
I love jalepenos, and most of the hot sauces, pepper sauces Ive tried. The ones that are just hot without any flavor, I don't care for. If it has a lot of flavor, I don't mind if it makes my eyelids sweat.
...Most of the pepper sauces always get better the older they get.
...I probably have 30 different types [:D]. The problem with going to that shop is that I want one of each...[;)]

In the South, every dining table had a bottle of this sauce. It is very easy to make, no cooking or mixing or anything. Just take a suitable glass container (like the ones in the picture) and stuff it with your favorite home grown peppers. Fill it with white vinegar and let stand for several days. It is important to use White vinegar. As the volume goes down, just add more vinegar and let stand. You will know when it is time to discard these peppers and start over with fresh peppers. Tastes great on anything you want it on.

All the pics i saw were "pepper sauce" Except the top one... Thats just VINIGER, with "leached-out" capsasin in it!!!

Sorry for the late reply Jim, I don't really have a recipe for it. It includes Tomatillo's, Jalapeno's and Green Cayennes, along with vinegar. You may have to try your own.0 -
