Great venison chile recipe
Boys, I am no kind of cook. But I have 30 pounds of venison burger and sausage that I have to do something with.
I got this recipe off the internet. It is very easy to make and the ingredients are all available at the grocery store. It is the best chile I ever had. If I can make this stuff, you can, too. You can use either burger or sausage, I used sausage yesterday.
I like mine a little hotter, so I did add 1 tablespoon of cayenne pepper.
The only part that really involves cooking is sauteeing the onions, garlic cloves and burger/sausage. For the rest, you just dump in the ingredients, then let it simmer.
3tbsp olive oil
6 oz tomato paste
1 large onion
14 oz stewed tomatoes
2 cloves garlic
2 lb venison burger
1 ea. 4 oz. can green chilies [in the Mexican foods section]
3 tsp chili powder
1 ea 10 oz. can beef consomme [by Campbell's- in the soup section]
2 ea 14 oz cans kidney beans
2 tsp ground cumin [optional]
Sautee onion and garlic in vegetable oil
Add venison--cook until brown
Just do this in your big 2 gallon pot, then you don't have to wash a frying pan.
Add all other ingredients-- simmer for 30 minutes

The only thing that that recipe is missing is a can of beer. It is the secret ingredient in any good chili recipe.[^] 0 -
cumin optional? That's what makes chili taste like chili. 0 -
Yeah, the cumin is good.
But the first time I made it I couldn't find any cumin so I made it without, and it was still very good.0 -
Does the beer go in the chili or the cook? 0 -

I believe that is added in after it is in the bowl, at the table...hehehehe...actually 2-3 cans does not hurt.0
