    Anyone eat Buffalo?
    I have a friend who raises buffalo and had one butchered 2 days ago. I will be going over there today to pick up my 25lb "sample pack" and wondered if any of you eat the stuff and had any tips. This is my first try with this meat.

    Yeah, leaner than beef. Eat more of it.

    Ive had it a few times. There isnt as much marbled fat in it as regular beef, so not as much flavor. It can also overcook faster .

    I love buffalo. It is a great meat lean and lots of flavor.

    Costco or Smart & Final used to carry the Buffalo hamburger patties. And they were delicious. Haven't seen them in either place for a while.

    Great stuff. Been thinking about getting a couple, but probably wait till we get settled in Montana.

    I have had buffalo steak, and buffalo burger at restaurants. It is good.

    Can you find out where he got them? I found two ranches that sell live animals, one in North Dakota, and one in Colorado.

    I'll ask him and get back to you.

    The last batch he bought, him and a friend of his bought 10 because the price dropped way down for a 10 animal purchase over buying individual animals.

    I have two crucial tips. I have had buffalo steaks and burgers from many places. The very first buffalo burger I had was terrible, and it wasn't until several years later that I gave it a second shot and learned why. Buffalo is, as others have noted, very lean. It actually does have plenty of flavor. The key is that fat is what makes beef cook slowly. Buffalo cooks very fast. Don't go past medium rare or you will have meat so dry it hurts your soul as much as it does your wallet. That's tip #1.

    Tip #2: If you are cooking for someone else, overcook theirs. That way, you get to eat his share the next time you cook it.

    There are two big herds of buffalo about 30 miles from me at the Land Between the Lakes in west KY. Once a year, they will sell their surplus stock at auction. These are owned by the federal government. They don't bring a whole lot, as not many people can afford to feed one of the things! There is another private herd about 15 miles from here. He raises them, slaughters and then sells the meat. I have plans this year to go buy one from the govt and have it processed. Last year, the female breeding stock sold only for an avg. of about $450 per animal. Cheap meat!

    Hobby Guy, have you toured the Bison Range? Fun trip. Go to the bison roundup in the fall too. They auction off animals from there each fall.

    Buffalo is awesome. You'll love it. Cook it just like you would anything else.

    I like it much better than beef and it has lower cholesterol than chicken or turkey,,just as been noted several times do not over cook it

    I've eaten a LOT of Bison meat - http://www.seaportvillage.com/restaurants/retailer.php?rid=64 - we have a Bison farm in San Diego. You can buy the meat in many places around town.

    ... compared to steer meat ... no comparison.

    It's Bison, every time!

    I've eaten a buffalo roast. It tasted like roast beef but was a little stringier. It was delicious.

    If you have eaten Bison then it is ok to say you have eaten Buffalo.

    Better flavor and better for you. We have been eating Bison exclusively for the past 2 years. Ihave a freind who raises them and I pay $2.38 a pound for steaks,roast,burger

    Bison is fine meat, not as fatty as beef, very mild flavor. I prefer it any day. Ranks up there with pronghorn.

    Hey Zipperzap, have you ever had the Bison Burgers at the Airport In The Sky restaurant? The best seasoned Bison I have ever had, in fact I might just need to schedule a trip to Catalina just to get some[:D]

    I don't know about strange ... strange seems to exist here in abundance ... correct/right/

    It just depends how specific you want to be, I suppose.

    If you don't like the ground buff mix it 50/50 with beef it makes it taste alot better
