    I love mine. A brisket can take up to 12 hours. Tri tip only takes 3. Enjoy.

    I have a Brinkman Charcoal smoker, love it.

    Take 5gal bucket full of water and fill it with your wood chips. The wetter the better.

    Smoke your brisket for 3 hours, then wrap it in aluminum foil with some holes in it and smoke it the remainder of the time. Otherwise the brisket will be way too smokey tasting.

    Keep your water pan full.

    I'm going to smoke some Bacon someday and try some salmon as well. You'll love it. I love smoking.[:)]

    Time.....Lots of time....

    You can get good flavor and it will be cooked in a 3-4 hours, but if you want it to be tender, it takes 12 or more hours.

    What you going to use for heat? I use white oak primarily for heat and apple for smoke the first hour or two. Briskets take a long time, be patient. Don't open the meat door too much, valuable heat escapes. It will take a while to learn your smoker. I have a Klose 42" offset made by the guy in Houston that make a lot of the competition pits. It hums along at 225 for hours and does not use much wood. I did 3 slabs of baby backs and 2 pork butts, ran the pit for 5 hours and only used about 10 small logs. It's a good thing the pit practically runs itself, there is beer involved when I smoke meat![;)]

    There are lots of ways to smoke a brisket. The way Cubs mentioned seems good. I like to use a good Texas BBQ Rub Mix. I also use a heavy application of the mix then smoke it fat side up until its almost completely black. You can do this on fairly high heat. I then wrap it in tinfoil, again fat side up, and continue to cook on very low heat. I prefer my brisket to be well done, very tender, and very moist, so I don't put any holes on the "lower" sides of the tinfoil. I cook it anywhere from 6 to 12 hours or more, remove it from the tinfoil, slice it thin, and serve it in its juices. If you do not like it quite as moist, place it on the top rack of the smoker, fat side up, and cook on low heat until done.

    It looks as if Rickstir has a superb pit too!

    I got a good marinade that I am going to make up to soak the brisket in over night and then put some of it in the water pan as well.

    I am useing bricketts and mesquite wood.

    It looks like I will have to cut the brisket in half to fit it all between 2 racks as I got a pretty big one (9lbs.).

    This is the one that I got (except mine is green).

    And don't forget the fireworks! I got quite a few artilleries this year and a couple hundred various bottle rockets. And for the grand finale I am going to make sparkler bombs![:D][:D][:D][:D]
