Goose Recipes
I have had a great few days hunting geese and my kids don't want to eat it unless I make it into jerky or make gooseroni(pepperoni)
I've tried roasted and stirfry but they still think its too gamey. I get tired of the jerky thing and I don't have time to make gooseroni right now...(deer season opens in 12 days!!!!!!!!)
Any ideas would be appreciated.

Our season opened yesterday so I expect to have some in the frig soon. I have a couple of ways that I cook geese but I am getting tiered of the same old thing. So what is you favorite recipe for goose. Me and my palate Thank You. linthicum 0 -
I skin most of mine out. Bone the breast and remove the legs and thigh. The rest of the carcass gets cooked up for stock and the little bit of remaining meat picked off the bones. I like to take the boneless skinless breasts and pan fry in a little olive oil. Salt and pepper or other seasoning to taste. Very similar texture to a steak, and kind of resembles steak in taste. The leg/thighs I like to boil till tender, de-bone the meat and make "duck and dumplings", like chicken and dumplings. We will pick a few ducks and geese to roast, but just a very few. 0 -
I like iluvguns' recipes too.
Here's another thing to do with the boned-out breasts. Cut them into kabobs, marinate them overnight in olive oil, vinegar, and spices (or just use Italian salad dressing), then put them on skewers and broil them. If the goose is old and tough, it doesn't hurt to add a little meat tenderizer to the marinade.0 -
The last Canada goose I ate, my buddy cut all the meat into little chunks, 2 ounces or so, and breaded and fried it.

Smoke or Deep Fry !!!!!! BBQ is also Good !!!

Cube the breast and marinade overnight. Wrap each cube in a piece of bacon and top with a jalapeno held on with a tooth pick. Cook under the broiler. Serve as finger food type appetizer. 0 -
Thanks Gents for the recipes, I already do the gooseBQ. Some of those recipes suggested has got my mouth watering already. I know when you cook duck, you only cook it to rare or it will get tough. Is that the same when you broil goose?

I put shallow slices in the skin(NOT DOWN TO THE MEAT)then brine it in a clean bucket (1gal cold water,1/2 cup kosher salt 1/2 cup brn sugar,1/4 cup red-wine vinager, 1tblsp red-pepper flake 2tbl.sp. garlic pwdr,2tbsp onion pwdr.Brine for at least 2 hrs, adding a few ice cubes, or sit out on porch(if cool enough.(lid on bucket if outdoors).
Then roast at 500 for 30-35 min. reduce heat to 325 and cook until internal temp. is 150-155. Allow to rest for 15min. and ENJOY!!
Also works GREAT on ducks..[:p][:p]

I've tried low and slow and high heat and fast. My best results are always with high heat and short cook times.0 -

I like to bread mine or leave plaine and deep fry um. then I put my sauce on um franks red hot and honey in equel parts 0 -

Tell him, "CONGRATULATIONS!" It didn't happen to land on him, did it? First one I shot, at about the same age, sucker fell right on top of me! Scared the holy crap out of me!! 0 -

No it did not land on him. He hit it and it went down. Then some more started coming in so we told him to sit back. The ones coming in turned off then my son asked if he could go get his goose. And that quick he was off to go get it(without his gun). He got rite up to it and the goose started running. So I yelled "GET IT" he thought I said KICK IT and ran up to it and kicked it in the azz. Then I said tackle it and he did. Needless to say every one in the pit was laughing our azz off. And He got plenty of congratulations from everyone in our party.0 -
I'd go the Chinese route like the Peking Duck or Goose in Plum Sauce.
When you deep fry it does it come out like Chrispy Duck or more like that Turkey?
What was I listening to yesterday where they get a Chicken, a Duck and a Goose and stuff them in to each other. Now that sounds like eating. I'd get a Quail, Game Hen, Chicken, Duck, Goose and a Emu. Now only if I could find a oven big enough[:D].0 -

Start off with a broomstick or similar pointed object,......
find an obliging bent over victim, and spear until done.
Last step,.......run!0
