I found coon to be very greasy, alligator was very tough. possum is so ugly I don't even want to try, woodchuck is ok. sticking with bear and venison.

I have eaten them all, but I would really have to be hungry to eat
    possum again.

What does this fellow know? You do not leave the head on, you leave the feets on to make sure it is not a small dog!!

When I was growing up, there was a fella with a p/u truck and a loudspeaker who would drive around the neighborhood announcing,"I gots da gahfish, I gots da gaspahgoo and buffalos. Fresh coonz an possum just from da tree." Kinda like a surreal ice cream mann.[:o)]
Living in north Baton Rouge, there was a mixed population of displaced Cajuns and block folks. One fella used to pay us a nickel a Robin so he could make Gumbo.
Coon is good when prepared by someone who know what they are doing. My buddy and I used to bag quite a few coons from our duckblind. We would drop them off to various folks on our way back to his house in Arnaudville. Normally we brought them whole, but for some of the older folks we would skin'em. We had to leave a foot on the carcass so they were sure they weren't getting a cat.[:p]
