You'd need too many cameras.
One of the amazing things about the human head is that the two eyes, in the front have amazing depth and field of vision.
A camera or a bank of cameras just can't do it.
I remember seeing a pic of a 100 degree per side FOV color NVG set for pilots. This monstrosity had 6 cameras, 3 on each side and the images were blended onto one image, directed toward the pilots eyes.
It looked like a mad scientists graft of a spiders head on a pilots helmet.
But it weighed like 9 lbs! Unless you have Henry Rollin's neck, there's no way that using such a device while flying (which is fatiguing enough, believe me, with standard NVGs) could be accomplished well or for any length of time.
