Anytime I made chili with beans, I cooked the beans separately before starting the chili. And the beans must be soaked overnight or they will never soften.

after draining the soak water, using fresh water you should bring them to a boil for ten minutes then into the crock pot for at least 2 hours, but since you probably went a different path, i would plan on eating them tommorow

    warning about red kidney beans
Red kidney beans contain a toxin called Phytohaemagglutinin (Kidney Bean Lectin) that causes severe gastric distress, including nausea, vomiting and diarrhea. Under-cooked beans can be more toxic than raw and it only takes 4 to 6 beans to bring on symptoms. Cannellini and Fava beans also contain this toxin but in much smaller amounts.

A wise man once told me. "Anyone who puts beans in chili, doesn't know beans about chili."[}:)]

I use pinto beans and when you start cooking them use cold water. Bring them to a boil and let them boil for ten to fifteen minutes. Drain and rinse them and put them back in the pot with more cold water. Boil for about fours and they will be done...Bull[8D]

I know it is almost heresy, and least in Texas chili circles, but I like pinto beans in my chili.

    I'm just shocked!!![}:)]

It's all what you grew up with. We had chili, which had no beans, and chilibeans, which had more beans than meat but was made the same way. I liked them both, but dad wanted his beans (pinto) cooked with salt pork and served with corn bread, jalapenos and onion. Anything else and he was going to let you know, that wasn't how to cook beans.[;)]
