"Sometimes when I reflect back on all the wine I drink
I feel shame, then I look into the glass and think
about the workers in the vineyards and all of their hopes
and dreams . If I didn't drink this wine, they might be out
of work and their dreams would be shattered.
Then I say to myself, "It is better that I drink this wine and let their
dreams come true than be selfish and worry about my liver."

Do you add anything to it now or when it is ready? A little molasses or even some cloves can spice it up.

I even threw some ginger into apple wine. After about eight months it was awesome. Your mix sounds great. Have one for me.

i put a large clean garbage bag over the barrel. when it starts to work the bag will rise like a balloon.i then take a straight pin and poke several holes in the bag to let the gas escape slowly. when the bag deflates i check it about every other week by placing the mash in a jar and shaking it. if i hear a lot of fizz when i loosen the lid i let it set for another week. i usually strain and bottle the wine while it is still working EVER SO SLIGHTLY. this gives the wine some bubbles when you pour it. i still have a bottle or two i made in 1994that when you open it it comes out like champange

Well you are a quite accomplished home wine maker. I have made wine from peaches, scuppernongs and muskedines, plus many batches from kits.
Oh yeah, I did make a five gallon batch of watermelon wine one time. The damn stuff tasted like dish soap! Well, I figured I must have not rinsed out my primary fermenter properly. So I made another batch. It tasted like dish soap too. Dumped that batch out, that was it for me an the watermelon wine.
My buddy loved to make the five gallon batches of orange wine! Oranges ferment like hell for some reason. Make crappy wine, though.

Which type is your favorite wine? What type of barrel do you make it in?

    thanks a lot jim!!!
every other wine process i have seen called for lots of fancy crap, but this sounds like the way my g-dad did it
have been trying to find this "simple" process for years since his mix was all in his head and went with him...
