No idea how to make them, but had them a couple of times in Georgia earlier and I sure like them even if I am a Yankee.....

Salt and pepper them, dip them in a beaten egg, roll them in corn meal, fry them in a cast iron skillet in lard. Same for squash or okra.

Milk and egg wash. Then dredge them through cornmeal, flour, and seasonings to taste.

Dip them in a beaten egg, roll them in parmesan cheese, and fry with extra virgin olive oil.

....Don't do it backwards! Take the lightly wet tomatos and dredge them in half cornmeal, half flower containing salt and pepper...FIRST. THEN dip them in a egg milk batter (the "crust" stays on much better this way), buttermilk is the best. Then slap them in some hot oil...[:p] Love them fried green tomatos!![:p][^]

...For fried jalepenos, same process, except leave the salt and pepper out of the flour mixture. If you dip the peppers in the egg and milk first, the coating comes off in the pan...same procedure works for chicken fried chicken or steak too. Everybody wants to dipp everthing in the egg/milk batter first for some reason...backwards!...[;)]
