My experiment turned out good !
I just pulled my homemade jerkey out of the oven.
I experimented with a tabasco marenade (homemade) on about 1/3rd of what I made. It turned out great! Plenty of zing without being too hot.
All I did was make a traditional marenade and added 1 full 12fl.oz. bottle of tabasco to it.
I have been on a tabasco kick since I found these tabasco flavored peanuts and thought it would be a good jerkey flavor as well.

I used (all are aprox):
2 cups Dales meat seasoning
1 cup Cheap red wine
1 12oz bottle Tabasco
1tbs minced garilc
2tbs smoked salt
1 4oz bottle liquid smoke (I prefer mequite)
1 tbs paprika
1 tbs chili powder
1 tbs onion powder
1 tsp cyanpepper
Run this in a blender to make sure all the solids turn to a liquid and marinate the meat that is allready cut into strips for a minimum of 12 hours (this batch went for 24 hours) in the fridge. Then dehydrate in your prefered manor (I use a jerkey rack in my oven and it takes about 5 hours to get done depending on how thick I cut the meat).
If you like peppered jerkey sprinkle the wet pieces with course ground black pepper before dehydrating.0 -

It is good with venison.
This is my normal recipe I just added the large amount of tabasco this time. Normally I only put a couple tbs of it in.0 -

what tempature do u put them on, and do u use foil or what to put them on so they don't stick to the pan? been thinking of doing the oven thing myself just been afraid (don't want to wait another year[:D][:D]) 0 -

I do it at about 150 with the oven door proped open about 1 1/2 inches.
I have a special jerkey rack (it is like a grate with a drip pan below the racks) that is three teers high. You can order them from cabela's for about $30.0
