    We use a "Jerky Shooter" gun several times a year. We grind the pieces that are too small to handle. We freeze them until we have about five pounds and then season and cure then grind and shoot. Very tasty stuff

    So ground meat doesn't fall apart when you dehydrate it?

    I love the stuff made with ground meat. I do mine with as lean as I as I can get meat. A mixer can be handy for putting the seasons in the mix uniformaly. I use the bigger round nozzle and make one continous spiral coil about 1" apart on each tray.

    My old man uses a jerky shooter too. Works great. If you're going to use ground meat I'd suggest investing in on. He'll marinate the meat for a while and then he grinds it himself. After he grinds it he'll ad spices. He usually uses those spice packages you can get a sportsmen's warehouse or Cabela's with the cure stuff in it. Keeps a longer shelf life on it and tastes awesome.

    I have been using the "Jerky Cannon" for about 6 years now. I love it. The jerky comes out like the flat Slim Jim jerky. The key is not to over-dehydrate. When done right, it should be flexible, but not squishy. If you are looking for seasoning, I recommend the Backwoods brand. It is great tasting stuff.

    No, you can use the seasoning packets with ground meat.

    I take ground meat and use the Jerky Kits you can buy. Then use the Jerky Shooter.

    Good stuff.
