    that actually sounds really good. i think you are right about the fat % though. i remember reading about lewis and clark and they always complained about a lack of fat from eating pure elk meet. that much protein without fat or carbs will hurt you

    The term for this is "rabbit starvation" - this stemming from the fact that, if one eats a diet consisting of mostly rabbits, their health steadily degrades because the meat is so lean. Fats (animal or otherwise) are a necessity for a balanced human diet.

    On the fat to protein to carbohydrate thought, the general ratios presented in the Zone Diet and its derivative the South Beach Diet are 1 part fat : 2 parts protein : 3 parts carbs. You determine the amount of protein for the daily requirement and then calculate the amount of fat and carbs. I have had good luck with the diet and lost about 25# this year. The reason the protein is set is too much tends to overwork the kidneys and too little tends to rob muscle mass. Make sausage is an opportunity to make a balanced food. Sounds like you did very well.     While you are ordering from Cabelas, go ahead and order up one of those $600 grinders. I have been eyeballing those for years.
    I have a little rinky dink "Two pounds per minute" grinder I bought for eighty bucks. Takes forever to do twenty pounds of deer sausage, I like to grind it twice. It is more like three-quarters of a pound per minute.
    I hope to God you have a bigger grinder than mine to do a hundred pounds of sausage!

    I've got the 2lb/min electric grinder from Cabela's. It works great, just too slow for 30 lb batches. I start with a course grind of the meat and the fat, mix and add the seasoning, regrind on medium, then stuff. I didn't use the cases that came with the kit. I tried but they were a pain so I used collagen cases instead.

    I'll give this some thought. It's not that I don't WANT to share, I'm just nervous about giving away game meat then having someone get sick. Although the sausage is new to me I've always done all the other meat handling. Every once in a while I come across a piece of meat out of the freezer that is not quite right. I'd hate to give it to someone who would eat it instead of pitch it. I guess we will just have to have to have a GB BBQ!

    Well enjoy the game, If it snows all day saturday like they say, I may not come over the hill at all. I have to go check on my elk herd sometime over the weekend.

    Elkoholic - I use the Cabelas sausage kits for the venison sausage that I make. The trick is to reduce the amount of fat by about 25% from what they recommend. I use about a 1-4 or 1-5 ratio. So about 20-25%.
    I will definately trade some venison summer sausage for some elk sausage.
    I have yet to get some fresh meat, but I still have 1 3# log that is vacuum packed and frozen that I plan on thawing out tomorrow so I can take some in the woods with me on Saturday.

    I say thats too much health risk, for a giveaway, IMO.
