I was served some BBQ ribs once at the Rip Griffens truck stop in Bakersfield Calif. that looked and tasted like they carved them off a rotting road kill. I refused to eat or pay for them. Disgusting!
I will tell those that are less traveled that there is huge difference in the taste of common foods from one part of the country to another. Even Milk.

    Probably Hawaii.
Dig a pit, line with coconut shells, build a fire, clean a pig and throw him in with lots of pineapple. Cover for eight hours.

    Yummy![:D]

In South Carolina I love all of the Bessinger(Joe, Maurice and Robert I think)places.
There is nothing like a good Texas brisquet though.[:p]

in my opinion there is only one way to make real BBQ, slow, slow, slow, and it doesn't matter if it is done in Kansas city or new york city
    That pretty much covers it.

Country parts and pieces has nothing to do with it -
    it's people and expertise.

    Can't beat a good SW-style BBQer/

They turn out pretty good in my back yard.
Dry rub spices and slow smoked.
I also like the BBQ in the Memphis area too!

Texas does serious BBQ. Large quanities, lean meat and long lasting flavor.

St Louis has some good examples also.

Good Oregon BBQ is only found out at Doug Wilsons place!

North Carolina has the best BBQ on Earth. Problem is they also have the worst BBQ on Earth. If you are ever coming North on US-501, there is a little BBQ place on the left just before you get to the Virginia State Line. Don't bother to stop. They are the reason some people don't like BBQ.

Thanks, Sig, but I was paid many thousands of dollars for the recipe. I had to sign a non-disclosure agreement as well as a contract to never make it again.

Many of you have had it.

My brother-in-law makes the best brisket I've ever had. BBQ is definitely a Southern thang. Spicy hot is good (what else would you expect from LA?), but just can't go that sweet KC style stuff.

I beleive Texas. I didn't even know what a grill REALLY was until I moved to Texas. People here seem to take pride in their grills like they take pride in their guns, or their first born child. Texas loves their BBQ.

All you folks saying "Texas" are crazy! [}:)] Beef ain't bar-b-que! To be REAL Q is HAS to be pork! If you wanna try the best REAL BBQ in the world go to Memphis! Forget Texas and Kansas City and every other place you have mentioned. Go to the Rendevous on a Friday and try the dry rub ribs. They will give you a bowl of red beans and rice to start. Good stuff! On Saturday go to a place called "Cozy Corner" on Danny Thomas Blvd but don't go after dark! Not in a great part of town! Get their BBQ'd BOLOGNA! And try their pulled pork sandwich. It will make you slap your momma! They will give you a side of BBQ spaghetti. They also have bbq'd game hens that are wonderful. Then if you still have a hankering, on Sunday afternoon go to Corky's out on Popular Ave. and have their dry rub ribs. If you are around in May, don't forget the annual BBQ Festival. More q than you have ever seen anywhere, and ALL of it good. If you are up in my neck of the woods in September, we put on a q cook-off that is not quite as good as Memphis in May, but mighty close. It is a qualifier to Memphis. All other q is just wishful thinking compared to real Memphis q! [:p]

If you ever want some good BBQ while in the NC Smokie Mountains, stop in at Herbs Pit BBQ...some damn fine eating...and some beautiful college girl waitresses...and if you get to know Herb pretty good, you might find you a little spot of white lightning...or not...

I did a pork picnic shoulder yesterday on the smoker that turned out great!

I just really need to come up with a good homemade sauce to go with the stuff I am cooking.

Texas and the Southwest. Don't like that sweet crap, but I do like some of the dry rub BBQ. Still, Texas and the Southwest has the best.
