I believe U take the sausage out of casing and form patties. Then dredge in "PANCO" crumbs before deep frying.Care is to be taken to not have patties too thick, as the PANCO will burn, before the sausage is done. That's how i do it, anyhow..[:D]

Fishkiller is almost right...but you boil the eggs, wrap the sausage AROUND the egg, then fry it all. Great with a cold beer!

I made Scottish eggs with spicy deer sausage and coated it with Italian bread crumb and deep fried in peanut oil - YUM! [^]

    Ed,

Would you please be so kind as to share your recipe? It sounds tasty. [:p]

    Jim,

The sausage I used was a specialty sausage called hunter's breakfast sausage from my meat processing place.

Basically, I mix 2 eggs with 2 lbs of sausage.
Wrap the hard-bolied eggs with the sausage.
Coat it with your favorite bread crumb - I used Progresso brand
    Italian style bread crumb
Deep fry it - I used Lou Ann peanut oil for about 2-3 mins

    Enjoy!
