    Sometime's I use regular ground beef, sometime's ground chuck. My burger's usually go a little over a pound of meat each. I like em big. As far as condiment's go... Mayo, mustard, ketchup, onion's, tomatoe's, sometime's slaw, lettuce. Of course I grill these monster's with charcoal, and a little hickory, that I cut myself.

    I usually eat deer, turkey or buffalo burgers....but whatever they gotta be over charcoal with minced onion,bacon and cheddar made in them.
    A good potato roll, mayo, tomato and a slight spot of ketchup and brown mustard.[:)][:D][8D]

    Just as an aside - there is more and more ostrich meat being sold
    in burgers around here - there are a growing number of ostrich
    ranchers, here too.

    Funny thing is that ostrich doesn't taste like chicken - tastes like beef!

    ... good for you, too, it's got that 'good fat' that the health food wackos

    Mine are simple: a fistfull of ground round, a charcoal grill, medium rare, a homemade sourdough roll, a little(very little) mayonnaise, and a VERY thick slice of onion. Sometimes a little horseradish.

    That does the trick for me.

    I also have other recipes to impress any yuppy guests we may get from time-to-time.

    ONION MAYO MUSTARD LETTUCE AND TOMATO pepper jack or sharp cheddar cheese and pickle usually put tony cachere creole dry rub into the meat before cooking "CHEESE BURGR IN PARADISE"

    2lbs ground beef, 1lb Italion sausage mixed in with onion soup mix, garlic powder, resturant pepper, and a pinch of salt and made into patties. Put these bad boys on the grill for a treat, Melt in some American cheese slice and serve on a grill toasted bun, and my favorite ketchup, mustard, pickle, and onion, with a few slices of jalepenos.

    We get lean ground beef, and take a pack of Lipton onion soup mix and mix it in before slappen it on the grill.[:p]

    Gotta use the chuck. makes the best burgers. Broke up saltines, W-sauce and some Zattarains plus a spuge of A-1. mmmmmmmmmmm Oh,yea. Top with a thick slice of Pepper Jack and some Creole mussard.[:p]

    A man I worked with would butcher a full grown bull and grind the whole bull into hamburger. He gave me a frozen pound of it once. Couldn't eat it, was tough and the consistency of steak, but dry and not juicy at all. When I eat hamburger at all, which is rarely, I have a butcher shop grind some 60%.

    Gains burgers are okay if you spice them up a little. They are very lean. But you'll have to fight the dog for them. [:D]

    Never had moose or elk....but BISON is really really good. Actually grilling some today. Only place I know to get it is Central Market or Market Street here in Dallas/Fort Worth

    I start with 2 lbs 97% fat free ground beef, then add 1 lb of 97% fat free turkey italian sausage (try it I dare you) a few spices and and some beer and fire up the charcoal grill. YUMMMMMM! In fact that is what I am doing tonight.[:p] And as for you Doug Wilson.. curse you for bringing up In 'N' Out, they are my favorite burger joint and there are none on the east coast. [V]
