Beating the Meat
ive got these nice steaks, really nice steaks! anyways to tenderize them i just have to beat them with this meat hammer rite? its silver, got spikes on it? and any one got any good easy recipes for a nice marinade?

Good meat doesn't need to be tenderized. But the correct way is to beat it with the silver tenderizing hammer which should have 2 different types of spikes on each end of the hammer. 0 -
put 1 layer of saran wrap over it while hitting it, it will keep little bits from splattering, yes you'll tear up the wrap

A really nice steak should not need to be tenderized. If you are going to grill them, just season them with a little salt and pepper along with some olive oil to seal in the juices. Let them come to room tempurature before grilling. Then try not to overcook them.
Want to try something different? Make a pouch out of doubled alum. foil and put some whole peppercorns in it. Poke some holes in the foil, soak in warm water for a few minutes. Then after you start cooking the steaks, put the pouch on the coals or on your gas grill's rocks where it can smoke and close the cover. The pepper smoke adds a flavor that is great.0 -
Fer goodness sake there son, don't beat on those steaks, unless you want to turn them into cube steak..If they're "nice" steaks, as you suggest, you'll just ruin them. 0 -
If you have good meat you just have to put a light dry rub on them, anything more ruins the natural taste of the meat. 0 -

Good cut of steak DOES NOT NEED to be beaten...and as for a silver mallet with spikes?..cripes, you wanna eat mush?...Whenever I tenderize and it is not steak, I use a wooden mallet....works very very well and does not destroy the meat...
I dont understand, and classic is the same way, why anyone would ruin a good steak with bbq sauce or marinade....WHen we do steaks or prime rib, all that is on it is a bit of monteal spice...the one WITH OUT SALT...salt toughens the meat and also drys it out if its put on before its cooked....I always thought you bought good steaks or prime rib mostly for the taste of the meat....not a marinade..0 -
well, the other day drjew was saying Texas Pete (hot sauce) is really good rubbed on on steaks, and for some reason you won't taste the hot sauce flavor. try marinating it with that.
how about a taste test. cut your steak(s) up into smaller chunks, marinate different ones with different stuff, so you get to eat a bunch of different flavors. how's that for variety?0 -

I found that I can't find a decent steak in the local supermarket unless you go to Wegmans or someplace that sells dry aged beef.
So tenderizing a little is not a bad idea at all.
I used to grill my steaks until my Gourmet saucier bud clued me into pan searing and making a pan gravy. He had me go to a few websites that sell glaces and demiglace to enhance the gravy.
Out of this world.
I had the pleasure of eating at Peter Luger's in Brooklyn a little while back. USDA PRIME, dry aged Porterhouse, their way. I think they use a Salamander broiler and do them to perfection.
Never had anything as good as it.
A year or so ago my neighbor brought over a little package with on pork chop murphy.
I went there last week to watch her prepare it and take notes.
She used the hammer on the pork chops for sure.

try this rub on your steaks,we have had it several times,including tonight and its is good!!![:p]
1 tbsp old bay seasoning
1 tbsp light brown sugar
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp ground cumin
add all ingredients together and rub on steaks before grilling

i for one have not seen these alleged steaks, i do not know if they are a good cut not needing to be tenderized by a meat mallet, all i know is the man asked was about beating them with a meat mallet, which even on the best cut of meat possible it will not magically change it into something else, just make it a little thinner
a good marinade will only enhance the flavor of the existing meat, today they are making a mockery of cooking with all the junk they sell at the store, the cooking method is far more important, sb email me i will give you a recipe, and method for cooking any steak you have, and you will be able to cut it with a butter knife0 -

Mustard is also a fantastic marinade and a tenderizer. I know it sounds crazy, but just trust me and try it. [^] 0 -
Fresh-ground pepper,garlic powder,little wostershire, mustard, and a little juice from the cherry-pepper jar.Wait till room temp. and grill. U WON"T BELIEVE IT!!
