    I've done some drying and frankly, I prefer the soft to the crisp when it comes to fruit. If you're going for crisp, I'd suggest starting by curing the fruit in a hypertonic solution before drying it.

    I'm making this up as I go along but here's what I'd do if I wanted crisp fruit:

    1) cut it into thin strips
    2) soak it overnight in lemon juice into which you'd dissolved as much sugar as possible (and maybe a little salt?)
    3) dry.

    If that produces a carmelized product then mess around with the amount of sugar and salt in step two....I'm thinking that should get you a crisp product.

    ok ive tried the solution that you mentioned, and they are drying as i type. ive got two rows of golden delicous( bought a 3 pound bag that had a few small brown spots, on clearance for 83 cents,so i figured why not play with the dehydrator?) any way ive got the two layers of apples and the top layer is some grapes that was starting to shrivel up, its raisen time!
    ill let you know how it works out
