Catfish dry coating mix
My wife and I really enjoy oven baked (healthier) catfish fillets. It's a real treat to get them fresh instead of frozen here in Arizona. When I can find it in the store, I pick up a pouch of fish fry coating and simply press a wet fillet into a bowl of the dry coating mix to cover completely. I usually sprinkle each coated fillet with some cayenne just to give them a bit of "snap" and spray a light mist of PAM to moisten the tops.
Does anyone have a basic home recipe for a really good, savory, spicy dry fish coating that I can mix up as needed? I'm guessing that corn meal is one of the more universal ingredients but regular corn meal tends to be gritty. Is there a better base?

The simple method is to put the coating meal in a paper sack, then drop the moistened fillets in and shake. Coats them even and completely, plus when you're through you just drop the sack and excess meal in the trash.

Is this fine corn meal sold in a package or bag or do I just whiz the regular baking corn meal through a coffee grinder? I also see corn flour on some store shelves.0 -
I usually just use cornmeal w/some Tony's mixed in.
I use a Zip Lock bag to shake'em in and just seal it up when I'm done and save what's left in the freezer till next time.[;)]
Did pick up a couple boxes of Zataran's to try a few weeks back.One was the plain that you season yourself(What amounted to a high priced box of cornmeal).The other was already seasoned and was a bit hot for my taste.
The second batch I made,I mixed the two half and half and it was pretty good.

Pat the fillets dry before coating them with a mustard of your choice plus a light coat of flour and/or yellow cornmeal mix. To coat the fillets use plastic bags, one for the mustard, and one for the flour and/or cornmeal mix. Shake off the excess flour-cornmeal mix. This is a typical recipe for prepearing most any type of of fish fillet dish in East Texas or the Louisiana area. 0 -
1/2 cup White Corn Meal and 1/2 cup crushed Rice Krispies. May work in the oven, we deep fry in peanut or canola oil. We don't like things too spicy but you can ramp it up if you want. 0 -

We'd truly love to but my wife has to avoid fried foods - like the plague - as much as is possible. Given my chubbiness, I can ill afford the extra cholsterol and calories. And so, I coat them, season them up really well with only herbs and/or spices, a short spritz of PAM and bake the catfish fillets at 350 degrees for around 25 minutes rather than fry them.
We love the Cajun seasoning blends but have to avoid regularly using them since most contain a lot of salt which is another no-no for her - and not good for me who's toting the extra weight about.

Personally I like to take the catfish and rub them in Tabasco sauce, and put them in a mixture of fine cornmeal, a little flour, and a little of the basics...salt, pepper, cayenne. Then fry them up in some hot grease. Man, my mouth is already watering![:p][:p] 0 -

One I still use from my Grand dad- Basic but good!
Fine corn meal- 1-Cup
Cayenne pepper- 2 TBS
Salt and black pepper 1-TBS of each and mix it all up and thats it!
Dredge the fish flower, then in an egg wash then in the corn meal mix and deep fry.0 -

I have just sprinkled the fillets or steaks with a little Tony's and placed them on the grill. Grates have to be well oiled or the fish sticks like crazy, but they are delicious! 0
