Freezing NJ Silver Queen corn on the cob

    My wife blanches it for 2 minutes, then into an ice bath to cool before putting it in bags. No salt in the water. But that is with good old Kentucky "peaches and cream" corn. Your mileage may vary.

    Joe, I asked the wife how she does it and she told me she has three ways. You can freeze it fresh (no boiling), but it won't keep as long. You can boil it for two minutes (no salt in water), or you can boil it until it is ready to eat (no salt in water). She said if you boil it, make sure it is cold before you put it into the freezer. If you freeze it hot or warm it will go bad.

    I asked her how long it will keep. She said she doesn't know because she's never been able to keep it that long. [:)]

    first step is come and get some real corn from my family farm in central NY!!!!

    We have a variety called Gormet butter and sugar that has to be the ugliest corn there is but you would not belive the taste!!

    once you have the corn in hand stop at Granny's house for some tipe

    sorry to be a smart A## but i had to. we started picking 2 weeks ago and i love it!!! only bad part is when my cozy office jobs ends on friday its to the fields for the weekend. should be fun tomorrow in the heat wave we are having

    i will say i know grenny just blaches it for a min or two before freezing. we have also froze it husk and all(need a big freezer) and it is pretty good.

    I stand the ears up and fill a large freezer bag with water,..no cooking the corn. By freezing them in water, no air gets to them and they seem to me to be fresh when defrosted and boiled. YMMV

    We just shuck it and put it in foil and then a freezer bag and freeze. 4 or 6 ears in a bag and damn good if I may say so. I have been buying and stocking up on peaches and cream fresh corn.MMMMMMMMMMMMMMMMMMMMMMMMMMMM[:D][:D][:D][:D][:0][^]

    (Joe: As an aside, are you familiar with sliced Jersey tomatoes with
    a thin slice of onion and sugar on top? Am I forgetting anything?

    When I was a kid we used to eat those by the ton down in Stone Harbor
    Ocean and Atlantic City. I've introduced them to my family here and they
    like it just as well as we did.)

    OH MAN! That is some good eating! Never tried it with a mater from Jersey, but it works great with KY maters.
