I think I read something a long time ago about butter being more healthful than margarine.

The difference between margarine and butter?
Both have the same amount of calories. Butter is slightly higher in saturated fats at 8 grams compared to 5 grams.
Eating margarine can increase heart disease in women by 53% over eating the same amount of butter according to a recent Harvard Medical Study.
Eating butter increases the absorption of many other nutrients in other foods. Butter has many nutritional benefits where margarine has a few only because they are added!
Butter tastes much better than margarine and it can enhance the flavors of other foods.
Butter has been around for centuries where margarine has been around for less than 100 years. Now for Margarine...
Very high in Trans Fatty Acids... Triple risk of Coronary Heart Disease...
Increases total cholesterol and LDL (this is the bad cholesterol)
Lowers HDL cholesterol, (the good cholesterol) .... Increases the risk of cancers by up to five fold...
Lowers quality of breast milk ... Decreases immune response...
Decreases insulin response. And here is the most disturbing fact....
HERE IS THE PART THAT IS VERY INTERESTING!
Margarine is but ONE MOLECULE away from being PLASTIC...This fact alone was enough to have me avoiding margarine for life and anything else that is hydrogenated (this means hydrogen is added, changing the molecular structure of the substance).
YOU can try this yourself: purchase a tub of margarine and leave it in your garage or shaded area. Within a couple of days you will note a couple of things: no flies, not even those pesky fruit flies will go
near it (that should tell you something)....
It does not rot or smell differently...because it has no nutritional value, nothing will grow on it...even those teeny weeny microorganisms will not a find a home to grow.
Why? Because it is nearly plastic.

Some margarines start out with oils that are reasonably health in that the oil constributes to Hdl Colesterol, but when they are fixed with hydrogen, to make then solid at room temperature, the structure is changed into a substance that the human digestion system has trouble breaking breaking down. This is the Trans Fat deal that is now receiving the publicity.
Butter is easily handled by the body, but is primarily a Saturated fat- which means the fat molecules have their little connections filled. This results in a lot of energy or calories, depending on your point of view. These fats are the Ldl type, which is the "bad" kind (basically Hdl is slippery fat while Ldl is sticky fat)
So if your calorie intake is less than or equal to the amount you burn daily, the butter is burnt and in general terms is better for you than the trans fats in margarine
However given the choice, a lot of the uses of butter/margarine can be accomplished by the un-hydrogenated oils- such as olive which provide the slippery colesterol and no trans fats.0 -

Oleo margarine is not as healthy as the new cadre of "spreads" but it still enjoys widespread use in cooking as a hi-temp, smoke free, burn-free sauteing and frying medium. The best buffalo wings you'll probably ever make will be those fried in a modest amount of margarine, not oil.
Unless butter is clarified (solids removed), it burns and blackens at too low a temp, making it absolutely awful-tasting.
However, for buttering bread, muffins, rolls and pancakes, real butter - in moderation - is much tastier and it is healthier because it is natural and not artificially produced in a semi-lab environment.
The best scrambled eggs will be cooked in butter because of butter's complementary taste.0 -
I don't know which one is more healthful, but butter tastes better. If you put a stick of butter and a stick of margarine side by side in the yard, the birds will eat the butter and won't touch the margarine. I don't think that means if you eat butter you are a birdbrain. 0 -

I use real butter, slightly salted.. it tastes far better than margerine.
Funny thing is..
milk straight from the cow doesn't make you put on weight.
Simply because the fatmolecules are too long so the human body can't metabolize them.
What the homogenisation-process does, is smash these longstrained fatmolecules - unfortunately they're smashed to a strain of fat that we CAN metabolize.
It's the same with Margerine - margerine is just butter, with oil mixed in to make it easier to meddle around with - but oil is far easier to gain weight from.0 -
No margarine in the house, can't stand the taste and I know too many people in their 80's and 90's that never ate the stuff.

Perhaps, but it would be one molecule away from a biodegradable corn based plastic that is edible. All corn based platics are edible...right?0 -

I use that Smart Balance spread. They claim no trans-fat. Although it doesn't taste as good as butter, I can use less calories in my diet if you know what I mean. Smart Balance also has Omega-3 fatty acids in it, supposedly good for your cholesterol and heart.
The only problem with Smart Balance, is that you can't cook with it----it burns too easily and won't clarify.0 -

Perogi taste horrible when sauteed in margarine. The taste WONDERFUL when sauteed in butter. That right there is enough to use butter.
