    I'm putting some elk chili together for dinner. Chili purists will freak but I start with a bag of the Carol Shelby's chili mix then modify to either a bean or tomato chili depending on what I've got an itch for.

    If anyone has a good recipe that will work well cubed elk and deer I'd love to see it.

    I made venison chili last Saturday for our Superbowl Sunday party. It came out really good (if I do say so myself) and our guests really enjoyed it too.[^]



    2 lbs. ground venison
    1 lb. ground pork
    4 cans stewed tomatoes
    1/2 large sweet onion (minced)
    2 stalks of celery (minced)
    4 cloves of garlic (minced)
    1/2 teaspoon chili powder
    1/4 teaspoon ground cayenne pepper
    1/4 teaspoon freshly cracked pepper
    1/4 teaspoon salt
    1 jalapano pepper (minced, less the seeds and membrane)
    2 cups dry pinto beans (optional, as it takes overnight to soak them)
    2 cans pre-cooked pinto beans as substitute for above (optional)
    1 lb. Velveeta cheese (cubed)

    You can use a BIG crock pot, or a BIG pot/kettle for this. I have used both and find the crock pot to be best for slow cooking the chili. If you don't want to take 16 hours, use a big pot on the stove and you can get it done in about six hours. It's probably too late for tonight though.

    Start by putting the stewed tomatoes in the pot and add your onions, celery, garlic, peppers (cayenne, black and jalapeno). Next, brown the meats seperately and don't overcook it. Use a little olive oil for the venison, the pork won't need any oil. Be sure to drain the fat off the browned pork, there won't be any with the venison. * Also, adding the chili powder to the venison during the browning seems to have the best results. Add the meats to the pot and stir.

    * You'll need to cook on low for 16 hours with a crock pot, or simmer on the stove for 6 hours. Add the beans (optional) half way through either cooking method and stir in the Velveeta cheese during the last hour of cooking. Serve it alone, or with tortilla chips, Fritos, rolls, breadsticks, hashbrown potatoes, fries, or whatever you choose. Enjoy![:D]

    For a decent fast chili, start with Bush's Chili Magic and add to it as you want. I use it for deer and elk both.
