Nature Or Nurture?
This critter here:

BITES.
It seems to have a bad temper and a surly attitude. It will bite anyone or anything that comes close enough to be a threat or a perceived threat.
Reckon it got that way on account of its genetics, or did it have a really bad upbringing?
You know what it won't do? It won't charge across the yard to get you. It will only bother you if you get close enough to bother it.

I think it's hard to compare a turtles actions to those of a dog.
There's a difference between domestic animals and wild ones.0 -
Can't see the photo David, but I assume it is Chelydra, the snapping turtle? I would have to say a combination of both. Look at the build the plastron covers the vitals and almost no meat on the legs. Tiny little plastron. Snapping turtles raised in captivity do not show that aggressive behavior, and I have known several that love to have their chins rubbed (DON"T TRY THIS WITH A WILD OR UNKNOWN TURTLE!!!). It would appear that the behavior is normal for a wild turtle that feels threatened, but not in a captive raised turtle that does not feel threatened. I presume if you raise the threat level on a captive to injury, then you would get the defensive reaction. 0 -
I've always heard that if they bite down on your finger, they won't let go until it thunders.
Also, snapping turtle meat has 7 different flavors, depending on the cut.

Old wives tales Jim, each and every one. They taste like turtle which tastes more like frog legs or alligator than chicken. They can hold on for a good long time, but no one, anywhere, ever left a finger or hand in a snapping turtles mouth until it thundered.

They are not naturally mean. It is the owners who raise them and mistreat them which makes them mean and prone to bite. 0 -

I had a neighbor who could butcher them real quick, but first he would cut off it's head and bleed it out real good. After he had it butchered he would turn the meat over to his wife who would debone it, wash the meat, and soak it in wine for a couple of days. Drain, rinse, bread and deep fry. Oh, what a treat! 0 -
