Bison
Anyone like bison meat? We have a big herd not far from here at LBL. The state park at the lake serves it once a year in their restaurant after LBL culls their herd. Good eating. Kinda like beef, but a lot less fat and a little "sweeter." Anywho...in January they always auction off their surplus. Older cows and bulls, calves that they have no need for etc. They usually go fairly cheap. I am figuring this year, with the drought and no one having much hay,they will go REAL cheap. My plan is to buy one of the cows and have it butchered. I mean, the weight on last years cows averaged out a little over 1200 pounds, and the highest one sold for $500! That's a LOT of freaking meat!!! The processor who does my deer said he would cut it, package and freeze it for $200. Sound like a plan, or am I crazy for even thinking about it?

But does anyone else get bloated with gas about two hours after eating it? It does me that way 90% of the time.

you could send the hide out for a soft tan and sell it for the purchase price of the Bison.
I bought some Bison this summer from a friend of mine who raises them and there is nothing better then a slow cooked crock pot Bison Roast.0 -
Bison is great eating!!! Shred it and simmer it in BBQ sauce...YUM!! If I was in your situation, I would jump all over that. Less than $1/pound for good meat, I'd say that's a pretty easy answer to the question. 0 -

i had bison meat one time mixed with meatloaf. it was delicious. 0 -
We have not bought beef in a few years. My friend raises bison so we buy all our meat from him.
I buy half a bison at a time and the last couple times the price averages to $1.40 a pound after processing for everything (burger, steaks, ribs, roast). If anyone is near SE SD I can give you his number.
Store prices are $7.00+ a pound for bison steaks and roasts.0
