    Lima Bean Pie Recipe:

1 package (10 oz. size) frozen lima beans, thawed
    1 cup grated Cheddar cheese
    3 green onions, chopped
    3 eggs
    1 1/2 cup half-and-half
    1 teaspoon salad herbs
    1/2 teaspoon salt
    1 ready-made 9-inch pie shell

In a bowl combine the corn, lima beans, cheese and onions, mixing well. In a separate bowl, beat together the eggs, half-and-half, salad herbs and salt until well combined.

Pour mixture over lima bean mixture, blending well. Spread evenly into prepared pie shell. Bake at 350?F for 30 to 35 minutes or until pie is firm and lightly browned.

Actually it was called Texas Rancher Buttermilk Pie....so nananananana....LOL and the recipe is below..l.

Easy pie, it really is, as it tells you to use ready made crusts...UNBAKED....not the graham crumb kind but regular pie crust..

You need one 9 inch pie crust...UNBAKED

    2 cups sugar
    2 tablespoons cornmeal
    5 large eggs, lightly beaten
    2/3 cup buttermilk
    1/2 cup crushed, drained pineapple
    1/2 cup sweetened flaked coconut
    1/4 cup butter melted
    2 teaspoons grated lemon rind
    2 teaspoons lemon juice
    1 teaspoon vanilla extract

Combine sugar and cornmeal in a large bowl...Stir in eggs and buttermilk until well mixed...Stir in pineapple and next 5 ingredients...Pour filling into uncooked pie crust...

Bake at 350 for 45 minutes or until pie is set and top is lightly brown...Serve warm, at room temp or cover and chill until ready to serve...

Okay, warning now...this pie is sweet and rich.....and as I said, classic really likes it....

so there it is...do with it as you wish...*LOL...

I'm a southerner, but I've never heard of it. However..I just happen to have some pie crusts in the fridge, so I'll run out for buttermilk tomorrow and try it at my sis's Christmas Eve party Monday night.

I love lots of kinds of pies, but buttermilk pie is my favorite of all! And my wife makes the BEST buttermilk pie there is.

For an extra twist, try adding rum-soaked raisins. I've never had buttermilk pie that way -- the boss won't do it -- but it always sounded good.
