    The ales of Scotland generally have a malt accent. In their home country, a single brewery's products may be identified in ascending order of gravity and strength as Light, Heavy, Export and Strong. Or by a system based on the old currency of shillings, probably once a reference to tax ratings: 60/-, 70/-, 80/-, 90/-. Alcohol content by volume might rise through 3, 4, 4.5 and 7-10. The term "Scotch ale" is something used specifically to identify a very strong, and often extremely dark, malt-accented specialty from that country.

    Thanks! Interesting, this recipe had a slower boil than usual, just 55 minutes. My stouts are around 70 minute boils. The history of Scotch Ale suggests a 2-3 hour boil. We'll see how it turns out - it's fermenting as we speak!

    Sam Adams has a Scotch Ale that's good. You should be able to find that. Harpoon also makes a scotch ale. I like both of them very much. [:p]
