    Like a fine wine, a really great cheese has a distinctive "bouquet" that delights the olfactory sense and then caresses the palate on the way down. A small piece of advice here. Never use a Ritz cracker for a fine cheese. It has its own flavor that can compromise the taste of the cheese itself on your tastebuds. Buy a plain cracker (not a soda cracker) that has at most, a black pepper flavor.

    The cheese is always the star. The cracker is merely one part of the supporting cast.
