Flat Iron Update...
Went to a local high-end coffee shop for supper tonight (Shari's) and had a medium-rare flat iron steak.
Not the best steak I've ever had, but VERY good.
I will now find one in the meat market, to see how it is.

Doug, there are four rules to flat iron steaks:
1) Don't over cook it! SUPER HOT 450 degree plus grill works best.
2) Cut at a 45 degree angle against the grain when you slice it.
3) Don't over cook it! Real hot grill, and just sear the outside good.
4) Don't over cook it!

Yep, and I want to add one more bit of advise. Don't over cook it. I overcooked one last night and it wasn't very good. Dog was happy. 0 -
I need to find an empty freon tank. A buddy made a grill for me from one, many years ago. Used about 10-15 charcoal bricks, waited until fire was good and hot. I could cook a steak med. well in about 5-7 minutes. Man, I loved that grill. 0 -

Is "flat iron" a method of preparation? Reason I'm asking, is I asked a cute 'lil thing if she would be so kind as to go back into the kitchen and find out what cut of beef a "flat-iron" actually is.
Didn't get a satisfactory answer. Said it was brisket. If I'm in a steakhouse, I'll order better than mere brisket, thank you. Joe0 -
West: it's absolutely not a brisket. It's a muscle from the shoulder. Used to go for ground beef, but then people discovered it it very tender and flavorful. There's other names for it, but it has recently been "discovered."
By the way, it is a crime to overcook ANY steak! Enjoy.0 -
i cook steak rught in the pan, as if i were grilling it. it turns out great!
just need about a tablespoon or two of oil and about 5 min. on each side after applying a dry rub or something.
