I think that's how the deli does it. Should work fine.

Slice block cheese with a wire with handles.

If it is the soft and sticky kind (like Velveeta) we have not had much luck when using the slicer. It will end up gumming up the machine. If it is a harder and dryer type, the slicer works well.

Tomorrow morning you may wish to find out why the deli uses a separate slicer for cheese. All the other [meats] get sliced on another. Might be a special slicer, or a slicer set up "just so".

I don't have the answer myself. Sorry. Joe

Yeah, it is the soft velveeta type. I know about the wire thing but way too slow for me. The freezer and Pam spray just might work. Will make a report when/if I try to cut it at all. Thanks, Tom

A slicer is what you need, the only reason the Deli's use a seperate slicer for the cheese is to keep food cross contamination from happening. The meat slicers are easy to wipe down and sterlize between meat types but the cheese slicer creates a different problem and requires different methods to clean.
