    Was tempted to go Chinese, until I remembered it was Tues. (!!) :D


    Chinese Buffet in our town, is best deal for the $$, by far. I hit them about once a week, or every other week without fail. The guy's at work lunches, laugh at me. " Is that all you eat, Chinese?"

    Smile, and dig back in to my fare.

    I'm a Class B bachelor this week, so today I cooked up a crockpot of ham and limas. (That's Ham and M...F...ers to my fellow Nam vets!)

    2.5 lbs of hickory smoked pork neck bones

    2 12-oz packages of frozen lima beans (couldn't get butter beans here, my first choice)

    4 cups water

    Tablespoon of ham flavor "Better than Bullion"

    1/3 cup dried scallions

    2 bay leaves

    1/2 teaspoon garlic powder

    Black pepper to taste

    Crockpot on High for five hours. Remove neck bones and separate meat into small bits. Return meat to beans, discard bones. Thicken with corn starch if desired.

    Serve with cornbread and buttermilk. Serves six or one hungry guy for a week. Add salt if needed (mine didn't) and a splash of hot sauce at the table.
