Fresh Sautee'd Veggies -
Copious amounts (about 3 handfuls) of fresh (thin) green beans. Stem end broken off, broke in to 2-3 pieces each. A couple/three thin sliced yellow squash, a large thin sliced Zucchini, a large fine diced Vidalia onion. A thin sliced and then diced, somewhat spicy green pepper. A few pats of butter, some EVOO, salt/pepper.
Sautee'd until al dente'. Good stuff.

All the stuff I used to hate, and had to sit at the table, until you finished. I now love.

Many years ago, when I worked in a gun store, we regularly had "dine-in" days where people brought dishes in to share with staff and customers. One time, I brought ciambotta. A customer was spooning down a bowl of it and said "This is really good. What kind of meat is it?" And I said, "No meat. It's Italian vegetable stew." Whereupon he put the bowl down forcibly, gave me a look of utter disgust and stormed out of the store.

Back in the mid 70s I reported to a SGgt who owned an electric skillet. Once every couple of nights he?d bring it to work and saut? onions, garlic, yellow and green squash. Just till they were a bit cooked. Still crisp and not soft. Man was that delicious.
When I was stationed at PISC we?d saut? collards, potatoes, garlic and Jimmy Dean. Delicious!0 -

Try the same thing as basically "roll ups" on the bbq. Put stuff like tater's, onions and whatever you like on the grill seasoned the way you like it, rolled in foil, a bit of butter on top never hurt..) and cook a bit before your main course of meat is put on the grill..... 0
