Marinating some Jerky -

    I just got a new smoker. My other one succumbed to years of use and abuse. Wife had a guy power wash it when he was power washing the deck(She had that done while I was gone because I didn't do it in her time frame) well that was the beginning of the end, grease was holding it together :lol:

    So I got a new one. I got a master built propane smoker off of Amazon when they were running specials. I also got a Light Modified choke for my shotgun and it worked very good shooting 5 stand last week.

    I have a nice Boston Butt and I am going to smoke it on Sunday.


    BTW I love jerkey. I have smoked it and made it in a dehydrator and the oven. I think the smoker makes it taste better but the dehydrator is easier. London Broils are a great cut for jerkey because they have very little fat.

    Do you use liquid smoke in the marinade?

    A member of my gun club is a Safari / big game / 5 continent / small game and game bird hunter...

    He spends 2 months abroad every year and another 4 weeks in the US or Canada on hunting excursions...

    He sends me small lots of jerky for the dog and the ferret - and occasionally some packages for myself or for the girls...

    I have cranberry buffalo and pineapple lesser kudu and bacon style javalina right now...

    The girls really like the dehydrated or smoked fruit accompanied by a selection of nuts (so do many of their friends or coworkers and the other pets / animals / critters...) that his wife puts together...

    Tangerine and mandarin orange and pineapple and multicolored lemons and limes along with apple assortments seem the most popular...

    He sent me some small cuts of Hawaiian axis deer a few months ago that we cooked like small steaks that were pretty good - he says they are trying to drastically cull the heads and cut down on the population of axis deer in Hawaii...

    See if he will send you some mike.

    Any meat if fine but I like ng'ombe and nyati, twiga is not too bad either. You can get it all along the East Coast of Africa and the South Central areas.

    I did not use any Liquid Smoke in this particular marinade. I am very judicious in it's use. (Depends on what marinade I am using.)

    I believe the spicy Jamaican Jerk marinade, will more than make up for it, in this particular case.

    Believe or not my hunter friends wife usually uses one of the lawrys marinades - she swears by remand says they do a decent job comparable to more expensive and boutique marinade products...

    She also does a Chesapeake bay seasoning and Tabasco sauce on some items - however I do not care for their flavor palates myself .

    I prefer Teriyaki, (very close to using on this batch.) The Jamaican Jerk is rather new for me, decided to give it a try. Fresh grated ginger/Soy sauce salt/pepper is pretty good also. I do Stubbs Beef Marinade, excellent (the best) pre-made marinade. A few others.

    No matter how you make it, jerky is awesome.
