Just curious for the future when I have to buy a new air conditioner. What brand and BTU is your unit?

May be a bad circuit board.I worked on a package unit that would quit cooling in the morning and work fine in the late afternoon and night.Someone smarter than me told me to see if it quit when the direct sun was on the unit and started working again when it was in the shade, which was the case.A solder connection in the board had a tiny crack and when it heated up it lost contact, cooled down it regained contact.Replaced the board and the problem went away.

If it works for eight hours it isn't the refrigerant being low.
My guess as yours is that a temperature control is wacky and replacing a board or whatever if you have a model number you can probably look up parts and schematic, have you tried lowering the t stat when it quits cooling to see if it will kick at a lower setting?

They are hardly worth a lot of effort as a new one depending on size is probably a few hundred bucks.
