what else besides beans do you..

    if it doesn't have oregano and cumin, it's not chili

    other stuff? garlic, salt, etc. if it's a chili stew it's going to have salt and pepper. and celery.

    for garnish I wouldn't do more than shredded cheese and onions. always have crackers or nachos depending on what type of chili.

    Black beans, red beans, chili beans, all beans!
    Ground meat, cubed pork, Italian sausage, carrots, beer, tomatoes, garlic, chili powder,garlic, onions, garlic, red, green,orange, and red peppers,more beans, and some other stuff I cant remember at the moment.......
    Beautiful thing about chili is, everyone has a different opinion of what it's supposed to be like!
    Wife makes a killer buffalo chicken chili. Our daughters friends mother won $10,000 for that recipe!

    Something you might not think is good until you've tried it is, Chocolate. I use the cooking chocolate, just don't overdo it, it is just for a subtle flavor. Now it is one ingredient that is always a part of a rather flexible recipe.
    Another oddity of my Chili is Onions and Sweet Peppers (yellow, green and red) cut into tiny cubes and lightly sauteed before going into the pot near the end.
    I'm also using ground Pork more and more, IMO a better more robust flavor than Beef. I hunt my own Hog meat.

    besides a plethora of beans, i will brown a roll of jimmy dean breakfast sausage[HOT] in addition to cubed elk or venison. this could be either whitetail or mulies, sometimes both. i too will sautee quite a bit of white onions . with add a can or 2 of diced tomatoes with green chilis to the mix.

    All I do is eat the chili. The wife uses beans red beans, the meat is a combo of ground turkey and surloin for extra zip. Onions, garlic, and her top secret spices. On the cold side lately we skip the bread and serve the chili on lettuce with chopped tomato sliced halopino pepers and grated cheese.

    Man that is some good stuff...

    Several pounds of browned Ground Chuck. Add in Several diced onion and several cloves of garlic, as the meat browns. Salt/Pepper.

    In a large Crock pot, add a large can of diced tomatoes, another large diced onion. A large diced green pepper. A handfull of pickled diced Jalapenos. A tablespoon of Gunnut505's red chili powder. A teaspoon /tablespoon of Gunnut505's green chili dust, adds complexity. Cumin. A large can of dark red Kidney beans. (An alternative is a couple large handfuls of dried Pinto beans, slow cooked overnight.) A can of Black beans, (or dried mixed in with the Pinto's overnight.)

    When I am growing a various mix of hot peppers in the garden, it gets several variety, fine diced added in. If you want it to make it, make you sweat hot, add a teaspoon of Gunnut505's Chile Pequin' ("Caution, Hot, Hot.")

    Crock pot on high until a vigorous boil, (a couple hours.) Crock pot on low overnight.


    Sometimes(rarely) add a can of young corn niblets. Serving over rice, reminds me of School lunches, and is good as well.

    I prefer a good spicy bowl of fine chili all on it's own. Adding a layer of shredded sharp cheddar and a dollop of sour cream on top, nothing wrong with that. :D





    I plan on making a batch in the next couple days. One of my all time favorite dishes/meals.

    Now you have done it. Chili started. Equal amounts of dried Pinto, Red Kidney beans and Black beans on a fast boil. (One cup of each.) Several (8-10) shots of Tabasco orangle label Chili Pepper sauce in with them. 3 lbs of ground Chuck, ready to be browned. All other ingredients to be added to Crock Pot for overnight cooking.

    Chili Goodness to be consumed tomorrow. Mmmmnnnnn good............................. :D

    When beans are added, it makes the dish bean soup with meat in it. I do serve pinto beans as a side dish. To each his own, I guess.

    I added about 1/3 cup dried Red Quinoa this time. I am anxious to see the difference in the end result.

    My Sister in Law sent it (and a bunch of other spices etc.) From NM. a couple years ago. It has been living in my cupboard every since. I saw an opportunity to finally open it and use/try some. :D
