Tonight I start making my Grandma's Pizza Rustica pies. Easter pies.
I [we} layer the meats and cheeses, not chop them up.
My Grandma's old recipe was published in the cookbook; The Talisman"s Italian Cookbook.
Must have been about 1975 or so.
Do you have a copy of it??

Not a problem, I think I will try to find a copy myself, but because This Thread was meant for just you, I thought I'd give you first shot at it.. I can always find another one , besides, where you're heading to Italy it might be easier for me to find it here in the United States.... you know the Italians are going to scoop up all the Italian cookbooks. That pie does looked interesting.0 -
Quick recipe:::
Start with salami layer on bottom. Then layer of Ricotta {beaten eggs, parsley. black pepper} mix.
Then layer of thick cut ham slices, then thick sliced mozzarella.
Repeat layers till you get to top. end with salami. Cover with crust , bake till you can't stand to wait any longer.
'Serve cold with lots of fresh crushed black pepper.
We don't put hard boiled eggs in ours.
We use beaten eggs in the ricotta to bind it together when it cooks.
Should be lite yellow colored.
Nutritional Data: Per slice:
4 calories
1 gram protein
2 grams carbs
1 mg sodium
3 mg fiber
1/2 mg poly unsaturated fat
1/4 mg saturated fat.
You just need to get 195 slices from one pie.0 -
