Homemade Gumbalaya!
The wife just made some and oh my.....it is one of, if not the best dish she has ever made! I just ate enough to get me through the weekend I think.

I like my jambalaya with sausage and shrimp.
Oh on those shrimps...what ever the recipe calls for triple the shrimp
amount, 1 lb becomes 3 lbs when I make it.[:p][:p]

Have a good friend who's wife's family owned a lot of rice fields down near Gueydan, Louisiana. Used to duck hunt down there with them and every day we ate lunch at a difference local restaurant. Oh my God, the food was always different but always very tasty in there different ways. Was rather a toss up as to what I enjoyed the most. The duck hunting or the local food[:p] 0
