Pinto Beans Slow Cooked -
About 5-6 handfuls of dried Pinto beans. About 5-6 cups of water. Several copious shots of Orange label Tabasco. A couple shots of Stubbs Liquid Smoke, two medium fine diced onions, a fair amount of black pepper, some salt. A large can of diced tomatoes, about a tablespoon Extra Virgin Olive Oil. A finely diced clove of Garlic.
On high, until boil.
Low until I go to sleep.
On warm after that, for a day or two.
The longer it cooks, the better it is.
Over rice, with fresh fine diced onions over it.
Mmmmmnnnnnn,........................Mmmmmmnnnnnnn.....................
Large slow cooker/crock Pot.
May have to throw some of the the Dog bone rejects in it to add flavor. [:D]

Thought about adding some sliced smoked Ham bone reticulate matter. If I had it off the bone, in the dehydrator, with the Ham Jerky, I would most definately include a Ham bone. [:D]
Not wanting to tackle that particular boar, I am okay with doing without.

Fixed up another pot of pinto beans and ham hocks a day or two ago, along with some rice and jalape?o cornbread. Killer stuff! Can't wait for the evening meal to finish it off! 0 -
Slow cooked beans, with fresh diced onions, Chow chow if you have it, and Corn Bread, is the absolute best meal. IMHO.

Just added an entire Hillschire Farms Finely diced Smoked Sausage. (And another medium sized fine diced onion.) A few more shots of orange label Tabasco, and some of Gunnut505's Galena Blasting Powder spice.
Added a generous amount of crushed red Chili's with seeds.
Bubbling on high again. (Low, most of the day.)
Will partake here, in a couple/three hours over some rice, with finely diced onions.

Put the same things in an Instant Pot and eat in less than one hour. It will be just as good. [:p] 0 -

I always cook my beans for seven to ten minutes with baking soda and I never knew why. I drain them and start over. Thanks for enlightening me. If you decide to use the instant pot which works well, let the pressure decrease naturally, dont use the fast release or you will have a bean ceiling. 0 -

In a pot on the stove with a couple of strips of bacon with salt is all that's really needed, but I use the slow cooker. two pounds of beans soaked overnight, drained and rinsed, one half finely chopped onion and several chopped garlic cloves with two teaspoons of salt stirred in thoroughly in five to six cups of cold water (or enough water until beans and ham are submerged about 1/2 of an inch), plus meat and skin with fat removed cut or pulled into bite size pieces from about three pounds of smoked ham hocks, and cook on high for about 5 to 6 hours. Stir twice, thoroughly each time (once every two hours) salting to taste, adding hot water as necessary keeping beans and ham submerged between 1/2 inch to no more than 3/4 inch of water. Stir thoroughly and test beans for doneness as necessary. Once beans are done, serve, and/or remove to cold container, unless you prefer soft beans. [;)]
EDIT: Change "One pound" of beans to "Two pounds" of beans. Sorry for the mistake here folks. I caught it this AM when making another pot using this recipe, and caught it when I realized that I had only used one pound of beans. :oops:0 -

It breaks the skins on the beans and gives you a bit of paste to thicken the mess.
Also darkens the beans, and supposed to give some gas relief.

We use Anasazi Beans, double smoked ham hock and a link or two of sliced andouille sausage ("Red Neck" andouille made in Kalispell, MT)...the jalapeno corn bread is a must!

Pinto beans without ham? blasphemy!!! Nothing finer then pinto beans and ham hocks... are you turning into a vegan?[;)]
And I got to agree with the baking soda, without it, for the first couple of days you only have Pinto bean soup
I also love alittle vinegar in my beans0
