    I'd go back to the shanks if possible, there's very little meat on the ribs. Did you finally try the possum and skunk sphincter recipe that you literally harassed me for? Remmy suggested it was one of his favorites and I remember you telling me of your failed attempts that all tasted like...well, you know. [:D]


    Hey, you told me possum was a delicacy in the southern states. I called everyone I know in about 14 southern states and they ALL told me "who is the pecker that told you that?". So either you were a joshin me or they are liars and don't want the great possum meal to get known.?

    I'll be the first to admit that red beans & rice are not really my cup of tea. I will eat them but not ever have a hankering for them.

    Have always been a meat & potatoes kind of guy. Just the way I was brought up I suppose.

    My wife just fired the pressure cooker up and we're having a roast in about an hour. Cooked with potatoes, carrots, celery and onions and of course with just a dash of that secrete Southern ingredient...bacon grease.

    One of my favorites. (As well as Pinto beans and rice, and Black beans and rice.) Basically, I LOVE any variation. Has to include fresh fine diced onion over the top. Chow chow is a bonus when I can find it.

    The Louisiana influence on the Red beans and rice, is a nice change.

    Zatarains makes good starter packs. (Red beans and rice % Black beans and rice.) Quick and easy wins the day sometimes. I work long hard days/hours.

    Pinto beans are always slow cooked. I favor Brown rice.
