hot mama pickled sausage substitute?
Okay here it is about 11:30 night, and for some reason I got a hankering I have some hot pickled sausages. Needless to say I didn't have any in the house, the last time I made my homemade ones I ate them all... And not wanting to run over don't buy some because although they taste good, the texture is really mushy compared to what I make.
So I go into kitchen to see if there's something else that would satisfy me other than hot pickled sausages, and while I was going through my pantry there they were. All three of them sitting side-by-side, just as pretty as you please looking like a threesum begging to get together was a can of Vienna sausages, a bottle of White vinegar and a bottle of hot sauce.
Well I opened up the can of Vienna sausages, dumped out the liquid inside of it, put a small amount of white vinegar (just enough so you can barely taste it) in the can and added about 15 dashes hot sauce... Put the lid back on and shook it up...
Not bad for an impromptu hot pickled sausages, and a lot better than store-bought ones... Plus it's a lot cheaper than store-bought ones... But still not as good as my hot and spicy pickled sausages, but close.
And yes I know they make hot and spicy Vienna sausages that has Louisiana hot sauce in it, but it doesn't have that pickled taste because it has no vinegar in it. Plus I can buy the original recipe Vienna sausages for about 40 cents and can cheaper at the dollar store that I can the flavored ones at the grocery store
Looks like I found a new way of eating my protein snack (canned meat) for when I go hunting, or traveling via an automobile...[:D]
I bet that hot sauce would be good in a can of oysters too...[:D]
I have several cans of oysters in the pantry, looks like I'll try that tomorrow night for my night snack[^]

When it comes to pickled my Father has tried just about everything.
A great hobby because I am the recipient of the best homemade pickled, spiced animal meats at least in my house.
Then there is the eggs, pickles, vegetables of all kinds. The good thing is I will go by his place next week and do some shopping.
And hot sauce goes on many things until bad things happen.
I guess when you find a recipe stick with it until something better comes along, rem.0 -

I guess I'm like your father, I pickle everything. I still have three jars of pickled green beans with hot peppers to give them Heat still left in my pantry the last time I pickled...but my favorite is hot pickled eggs and hot pickled sausages... I think that I have pickled everything possible, except for pigs feet. Not because I don't want to, because I have eat and enjoyed them. But because I've never had access to pigs feet...but that soon will change because my son has decided he's going to start raising pigs to slaughter... Which means I not only get to start pickling pigs feet, but I get to start making homemade pork rinds [:p]
And yes, when it comes to pickled anything, I like heat

What usually happens to me is I burn myself out on something then move on to something entirely new or I will graze back to older green pastures.
But you know that when you have to do something about it you will go to no end to make something that will provide the craving.

Remmy, it has been decades since I partook a can of Vienna sausages.
If my old memory is still worth the price of a can, those thangs had the texture of limp noodles swimming in snott![xx(]
I too like to pickle stuff and enjoy Pickled bologna, pickled red hots (fat hot dogs) pickled cows tongue, pickled beets, along with a good dill pickled cucumber.
I can understand your urgency for a late night quick snack but to really get the vinegar to do any work, it takes a day or two or three to saturate through the subject meat.
Don't mean to take anything away from your good eats but being raised on a lot of those cans full of ??? meat (exotic?) I have (in my mind) left poverty behind through my taste buds.
Memories of the grease cake stuck to the roof of my mouth after eating an Armor Potted Meat Food Product with mustard sandwich has nearly been forgotten. Nearly![:0]0 -
have you tried Herbs pickled sausage? they are ok but not as good as the old penrose
you can also get Bel View hot pickled cauliflower. save the juice and then cut some ring bologna and let it set for several days[:p]0 -
I've heard Potted meat, makes excellent Pate' also.

Oh I keep cheap can meat around for when I'm hunting so I can have a quick high protein snack... I don't make it a main stay diet like you do with taco Bell tacos.[^]
Besides that, there's enough meat in Vienna sausages to still be considered meat, not so with taco Bell tacos[^]0 -

If they're not as good as Penrose I wouldn't like herbs pickled sausages. Penrose has too much cereal in them, and are extremely mushy.
But I do most my own pickling anyway, the only time I usually cheat by reusing pickle juices is to throw some boiled eggs and onions in it.0 -
Dang all that talk about meat eatin, I got to get GG's pickled possum recipe out and start skinning and a pickling. 0
