Spent quite a few years working in Thailand for extended periods. The local crews and I got along pretty well and we would eat at the places they ate at. Some pretty ramshackle, but good food and cold beer.

Very often we would have another Westerner come with us. On occasion the guy would say, tell em to make it hot, I can eat anything they dish up. And sure enough their food would arrive and they couldn't eat it. The locals would laugh. They tell me that they have been eating this food their whole life and you can make the food so hot that they can't eat it.

Got turned on to it visiting my Brother and his Wife in Richmond, VA.
Place called Elephant Thai. Mmmnnn good.

The local place I've been to, when I say make it Hot. She knows I can take it. She had Family visiting from Thailand. Picked up my order. Prei Uhn keeps a ceramic crock pot of "Dragon Sauce," on the counter. When I ladeled one scoop on to my food they were like, "Ahh Yes." When I ladeled a second scoop onto my food they were going "No, No." When I ladeled a third scoop on to my food they were aggressively going "No, No, No" with much arm waving. Prei Uhn was just laughing.

    Love that Sheeit. [:0][B)][:D]

dreher-Wife and I ate there a few years back on our way to the Charleston area! Have a friend that lived with a Thia family when he was in he Peace Corps. Learned to cook their dishes and WOW, does a good job. He likes HOT however which I feel takes away from the real flavors. My favorite is Tom Yum soup.
