    Not that you asked but you had me till corn tortilla. They are probably one of the nastiest things Ive ever tried to eat.

    Corn is good but I really do like flour tortillas. Now if its hard shells then corn is best.

    Just thought of a way I have had them Taking a soft corn Tortilla and frying it in a pan. Not sure what was used it was in TJ and a street vender but it was great. I have used butter here in the states but its just not the same.

    Have hard corn shells as well. I MUCH prefer soft corn tortillas cooked one by one with some oil in a small cast iron skillet.

    Soft flour tortillas make it a Burrito. I'll be having those at work tomorrow.

    I may have to leave the house an buy some Ranchero re-fried beans. Not Tacos without some re-fried beans. [^]

    You must have missed my response to P3's Kielbasa thread. Everything there, based on my recommendation was Rough diced.

    Taco prep, in my humble opinion should be fine diced.

    Of Course, your opinion Is Fine by me. [:D]

    Try Pork next time and real corn tortillas with some home made salsa or pickled red onions.

    There is a place in Fayetteville NC(Pedro's Taco Shack) that serves taco's like this and they are fantastic. They also have my favorite; Beef Tacos de Lengua. ! eat 4 or 5 when I am down there.

    As long as you cook them fine by me. They just do not taste right when they are not.

    Now I do like refried beans but a local store has me hooked on some beans like this.

    Salsa is great with tacos, but the flavor hit should be the blending of the seasoned meat, meshing with the tomatoey/sweet/heat of the salsa, swaddled in a warm, soft corn tortilla.
    I put mine over the flame, just like the flour tortillas; brings out the corny goodness and caramelizes the sugars in the corn itself.
    Brisket with green Chile and onions on a corn tortilla....
    add a bit of melty Provolone, and it's a Zia Cheesesteak[8D]

    Corn Tortillas, cooked in a skillet with butter then folded on a rack to crisp as they cool.

    Frijoles Negros are mandatory here. Constructed pretty much as you say, but a top dusting of Cotija cheese added!

    Then Paired with a nice beer!

    Pretty sure that omitting the Devil's weed, Texan chiles and New York's idea of flavor was a conscious decision[;)]
